Loaded with fresh vegetables and cozy rich flavors, this Vegetable Soup is naturally low fat, yet it’s packed with textures, taste, and comfort. 

Slow Cooker Vegetable Soup

olive oil

yellow onion, (diced)

carrots,

celery ribs, (sliced)

garlic, (minced)

parsley

28-ounces can diced tomatoes, (undrained)

tomato paste

bay leaves

smoked paprika

salt

thyme

basil

oregano

pepper, (or to taste)

vegetable broth

corn kernels

dill or parsley, (finely chopped, for garnish)

lemon juice, (for serving)

Heat olive oil in a large skillet over medium-high heat.

Add onions, carrots, and celery; cook for 4 minutes.

Stir in garlic and fresh parsley and cook for 30 seconds.

Remove from heat and transfer to the pot of your 6-quart, or larger, slow cooker.

To the slow cooker add diced tomatoes, potatoes, green beans, tomato paste, bay leaves, smoked paprika, salt, thyme, basil, oregano, pepper, and vegetable broth; gently stir until everything is well combined.

Cover and cook on LOW for 6 hours, or on HIGH for 3 hours.

Add corn the last 30 minutes of cooking.

Ladle into bowls; garnish with fresh dill or parsley, plus a squeeze of fresh lemon juice.

Serve.

Spicy Red Curry and Coconut Noodle Soup with Shrimp

flat rice noodles

extra virgin olive oil or coconut oil

shallots

garlic cloves,

ginger

Thai chiles, split

red curry paste

chicken stock

fish sauce

coconut milk (2 cans)

kaffir lime leaves

shrimp,

salt and pepper

cilantro leaves

lime zest

red onions

lime wedges

Fill a large pot with water and bring to a boil.

Add noodles, cover and remove from heat. Allow noodles to soak/soften for about 8 to 10 minutes. Drain and set aside.

Pour oil into a large saucepan and place over medium-high heat.

Add shallots, garlic, ginger, chiles, and curry paste and sauté until fragrant, about 3 to 4 minutes.

Stir in chicken stock and fish sauce and bring to a boil.

Reduce heat to medium heat and stir in coconut milk. Season with salt and pepper.

Gently crush kaffir leaves in your hand and stir into the soup (or stir in lime juice).

Once the soup begins to simmer add shrimp and poach for 4 to 5 minutes. Add noodles and continue to simmer for 2 to 3 minutes. At this time you can discard the chile halves if you wish.

Adjust seasonings and top with cilantro leaves, lime zest and sliced red onions. Serve with lime wedges.

Chicken Gnocchi Soup

unsalted butter

yellow onion

celery

all purpose flour

Place butter in a large saucepan and melt over medium-high heat. Add onion, celery, carrots, and garlic, season with salt and pepper and sauté for 4 to 5 minutes or until vegetables begin to turn translucent.

Add thyme and sage and continue to sauté for 1 minute.

Lower heat to medium and stir in flour. Cook for about 2 minutes, continuing to stir to remove the raw flour flavor.

Whisk stock into the vegetable-flour mixture and stir until no lumps remain. Reduce heat to medium-low and simmer for 2 to 3 minutes or until the mixture begins to thicken.

Stir milk into the soup mixture and add the shredded chicken. Season with salt and pepper.

Simmer soup for about 15 minutes or until the soup thickens.

Stir in gnocchi and continue to simmer for 5 to 7 minutes or until gnocchi have cooked through. Add more salt and pepper as needed, stir and serve.

been making this almost weekly since October.  it's one of my favorite new recipes.  I have subbed in mushrooms for the chicken and the last few times I've topped it with parmesan and fresh made bacon bits.  10/10 recipe for sure.
