Tiramisu - Authentic Recipe!

mascarpone ((500 grams))

(roughly) Savoiardi biscuits ((lady fingers))

coffee ((230 milliliters))

tbsp dark chocolate (, grated)

tbsp coffee liqueur ((optional))

First, you need to divide the egg yolk and egg whites in two separate bowls and add 3 tbsps of sugar to each. Whisk the egg whites until they are stiff and glossy.

Then continue to the egg yolks and whisk those with an electric whisk until pale and thick.

Add the mascarpone and mix together until smooth and creamy.

Next, add one third of the whisked egg whites to the mascarpone mixture and gently fold it in as you would with a cake batter. Continue with the remaining whites a third at a time until it's completed incorporated.

Mix the espresso and 4 tbsp coffee liqueur in a shallow bowl and dip in the lady fingers (savoiardi biscuits). You want to dip them into the liquid quickly (around 2-3 seconds) whilst turning to soak each side.

Lay the ladyfingers in a glass or ceramic dish until you have one even layer. You can brake some biscuits to fit your dish .

Next, add half of the mascarpone mixture over the biscuits and spread out in an even layer, top with some grated dark chocolate.

Continue with another layer of ladyfingers and mascarpone as directed above. Finally, dust with cocoa powder and chill in the fridge for roughly 6-8 hours.

In a medium glass mixing bowl, whisk egg yolks until smooth. Add granulated sugar and continue whisking until combined.

Bring a pot of water to a simmer and place the bowl with egg yolks/sugar over the steam. Whisk constantly while heating until the mixture is warm, thick, and light yellow. Most of the sugar should be dissolved (rub a bit of the mixture between your fingers to feel for granules).

Allow the egg mixture to cool for a few moments. Add 2 tablespoons of rum and the mascarpone cheese to the egg mixture. Beat with a hand beater until the mixture is smooth.

In the cold bowl of a standing mixer, add 2 cups of heavy whipping cream. Beat with a whisk attachment until stiff peaks form (do not overwhisk.)

Gently fold the whipped cream into the egg/mascarpone mixture.

Add 1/4 cup of Meyers rum to the espresso and stir to combine.

Dip one ladyfinger into the espresso, turning it to quickly cover each side of the

cookie. Place the ladyfinger into a 9x13 baking dish. Continue dipping cookies and placing them to cover the bottom of the dish.

Spread ½ of the cream mixture over the layer of ladyfingers.

Top with a second layer of dipped ladyfingers.

Spread the remaining cream mixture and smooth the top with an offset spatula.

Cover with plastic wrap and chill in the refrigerator overnight.

Whip remaining 1 cup of heavy cream until stiff peaks form. Transfer whipped cream to a piping bag fit with Tip #1M.

Shake unsweetened cocoa powder through a sieve to generously cover the top of the tiramisu.

Score into 12 sections. Pipe 12 dollops of whipped cream, one in the center of each piece.

Sprinkle with ladyfinger cookie crumbs and chocolate curls, if desired.

Serve or keep chilled until ready to serve.

In the bowl of a stand mixer fitted with the whisk attachment, whisk together mascarpone cheese, heavy cream, and sugar. Whisk on high speed until soft peaks form. Then add in the amaretto and whisk until just incorporated. Do not over-mix or you'll get stiff peaks!

Line the bottom of a 8x8" baking pan with lady fingers. You might have to break some to get it to fit correctly. Pour 1/2 cup of brewed espresso on top of the lady fingers and let them soak it all in. You can pour more if it looks like they're too dry. Don't over-soak them or you'll end up with a soggy bottom!

Spread half of the mascarpone mixture on top of the lady fingers and sprinkle 1/2 of the chocolate on top. Take the remaining lady fingers and dip them in the remaining espresso. Layer the dipped lady fingers on top of the mascarpone layer then layer again with the remaining mascarpone layer and sprinkle the remaining chopped chocolate on top.

Chill in the fridge for 4-6 hours before serving.

Tightly wrap with plastic wrap and keep in fridge for up to 4 days.

Preheat oven to 350 degrees F. Line 3 baking sheets with parchment paper. Trace the bottom of an 8x8” or 9x9” square pan or 9” round cake pan on each piece of parchment paper. Set aside.

In the bowl of a standing mixer fitted with the wire whisk attachment (or in a large bowl with a hand-held mixer), whip egg yolks and 1/4 cup of sugar with an electric mixer until thick and pale. Transfer mixture to a different bowl, scraping the bowl clean. Rinse off the beater.

In the bowl of a standing mixer fitted with the wire whisk attachment (or in a large bowl with a hand-held mixer), whip egg whites. Once the mixture starts to thicken, add the remaining ½ cup sugar and continue beating. Once stiff peaks form add vanilla and beat to combine.

Gently stir in egg yolk mixture on low speed.

Add flour and salt and gently stir or fold in with a spatula. The batter should be thick and pale yellow.

Pour about 1 cup of batter into the center of each square traced on the parchment paper. Evenly spread it out to fit the square, leaving about ¼” border. The batter should be about 1/2” thick.

Bake in preheated oven for 10-12 minutes, until set and very lightly browned. Carefully transfer parchment paper to a wire rack to cool.

Once cooled, carefully  remove the lady finger squares from the parchment paper, set aside to use in the recipe.

Make the lady fingers:

Brew coffee and let it cool. (or use instant coffee or instant espresso and brew 1 ¾ cups).

Whisk the rum into the coffee, then pour the mixture into a large dish or baking pan that will fit the layers. Set aside.

Make the soaking liquid:

In a medium saucepan, whisk together egg yolks, milk and sugar until combined.

Cook over medium heat, whisking constantly, until mixture boils. Turn heat to medium- low and boil for 1 minute, remove from heat and transfer the mixture to a container with lid – but don’t put the lid on yet. Leave the lid open and whisk the mixture every few minutes until it’s cooled slightly. Then put the lid on and chill in the refrigerator for 1 hour. NOTE: this can be done before you bake the lady fingers, if desired, so it has time to cool. It can even be done the day before and chilled overnight. 

In the bowl of a standing mixer fitted with the wire whisk attachment (or in a large bowl with a hand-held mixer), Beat the heavy whipping cream and powdered sugar until stiff peaks form, transfer to a different bowl.

In the same bowl used to beat whipping cream (but with the cream no longer in it), beat the chilled custard, mascarpone and vanilla with the paddle attachment until combined.

Gently fold in beaten whipping cream.

Make the filling:

Quickly dip one of the three lady finger layers into the soaking liquid for about 5-10 seconds. Do not drop it in and let it sit or it will soak up too much liquid and fall apart. Remember, homemade lady fingers are more delicate than store-bought. If using hard store-bought you will need to soak them longer.

Place it in the bottom of the baking dish you used to trace the shape.

Spread 1/3 of the filling mixture evenly on top of the layer.

Repeat with the second and third lady finger layers and remaining custard. Alternating soaked lady finger, custard, soaked lady finger, custard.

Sprinkle cocoa powder over the top custard layer.

Chill for at least 8 hours, or overnight.

Cut into square portions and serve.

Prep for the recipe by setting out all cold ingredients and making the espresso. Pour the espresso into a shallow dish and add the rum. Set aside. Set out a separate 9X13 inch baking dish to layer the tiramisu.

Set a double boiler (or a small pot with a glass bowl resting over the top) on the stovetop. Add 1 inch of water to the lower section and turn the heat on medium. Add the egg yolks and sugar to the top of the double boiler. Vigorously whisk the sabayon mixture for 8-10 minutes over the heat until it is very smooth, thick, and much lighter in color. (It should look like lemon pudding.) Remove from heat and let it cool a little.

In the bowl of an electric stand mixer, whip the heavy cream into firm peaks. (Start on low speed, and gradually move to high, until the whipped cream is very thick and firm.) Remove the whipped cream from the mixer bowl and place it in another bowl.

Then scoop the sabayon egg mixture into the stand mixer bowl and add the mascarpone cheese and vanilla. Whip until very smooth. Scrape the bowl with a rubber spatula and beat again to incorporate any chunks.

Fold the whipped cream into the mascarpone mixture with a spatula. (Do not beat!) Continue to fold until the mixture is very even.

One at a time, dunk the Ladyfingers into the espresso mixture. Roll them over and remove them immediately. DO NOT let the Ladyfingers soak in the espresso; they will dissolve! Once dunked, arrange the Ladyfingers in a single layer, in the bottom of the baking dish. You should be able to fit 20-22 Ladyfingers in one layer.

Use a spatula to spread half of the mascarpone cream over the Ladyfingers in the dish. Then repeat with a second layer of Ladyfingers and a second layer of mascarpone cream. (4 layers total) Then place the tiramisu in the refrigerator, uncovered, and chill for at least 4 hours. You can chill overnight, but make sure to cover the top with plastic after the first few hours.

When ready to serve, place the cocoa powder in a sifter. Use the sifter to sprinkle a heavy even layer of cocoa powder over the top of the tiramisu. Cut and serve!
