This recipe is my take on the kontosouvli, a souvlaki marinated in oregano and chilli. 

Equipment and preparation: for this recipe you will need skewers. 


Pork souvlaki with oregano

pork shoulder,

lemon juice

olive oil

oregano

½ tsp ground cumin

cayenne pepper

tsp smoked paprika

garlic clove, grated

salt

Preserved lemon, smoked paprika and yoghurt make a divine dressing to serve with these easy beef mince kebabs.


Beef mince kebabs 

tsp extra virgin olive oil

beef

1½ tsp sweet smoked paprika

tsp fine sea salt

onion,

mint

black pepper

150 grams/5½oz full-fat Greek yoghurt

preserved

garlic clove, crushed

paprika

This blackened fish recipe uses sea bream but fillets of any firm white fish, such as catfish or monkfish, would also work well. Delicious served with <a href="http://www.bbc.co.uk/food/recipes/dirty_corn_85450">dirty corn.</a>

knob butter, plus more if needed

tbsp sweet smoked paprika

mustard powder

thyme

tsp black pepper

tsp white pepper
