This is foolproof British-Indian-Restaurant-style onion fried rice can be ready in 15 minutes - while your favourite curry is simmering away.

🗂 Onion Fried Rice Recipe

tbsp ghee ((use other oil

onions (finely diced)

tsp salt

tsp garlic salt

tsp white pepper

tsp nigella seeds

tsp dark soy sauce

Heat the ghee in a wok over a medium heat.

Onion

Add the diced onion and cook for 4-6 minutes, stirring often until the onion softens.

Rice

Add the boiled rice and stir until the rice has heated through.

Seasoning

Add the salt, garlic salt, white pepper and stir.

Move the rice to one side of the wok and add the egg and soy sauce, stir quickly and often until the egg turns to cooked scrambled egg.

Seeds

Stir in the nigella seeds and heat through for a final minute.

Serve

Serve topped with fresh coriander (cilantro).

tsp ghee ((or sunflower or olive oil))

onion (finely diced)

garlic (minced)

tsp garam masala

fenugreek ((optional dont worry

tsp cumin seeds

nigella seeds

mangos

350 ml (1 1/2 cups) white wine vinegar

400 g (2 cups) caster sugar (granulated sugar)

Add the ghee to a saucepan and heat over a medium heat.

Add the onion and fry stirring often for 6-8 minutes, until the onion starts to soften and turn transluscent.

Garlic

Add in the minced garlic, stir and cook for another minute.

Spices

Now add in the garam masala, fenugreek, salt, cumin seeds, and nigella seeds and fry, continuously stirring, for 2 minutes until the spices start to release their fragrance.

Mangoes

Add in the chopped mangos and stir together.

Sugar

Now add in the sugar and white wine vinegar.

Stir

Stir everything together and bring to the boil.

Simmer

Turn down the heat and gently simmer, uncovered, for one and a half hours, stiring a couple of times during cooking until you&#39;ve got that signature chutney consitency.

Turn off the heat and allow to cool befor serving.

Easy Keema Curry Recipe

500 g (1.1lb) minced deef ((ground beef)*)

tsp black pepper

tsp cumin

tsp ghee ((or neautral oil))

onion ((diced))

garlic ((minced))

tsp minced ginger

tomato puree (paste in the US)

tbsp curry powder ((see notes))

tsp coriander

400 g (14 oz) tinned chopped tomatoes

200 ml (7 fl oz) water

140 g (1 cup) frozen peas

tbsp fresh coriander (cilantro) ((chopped))

boiled rice

Heat a large frying pan over a high heat.

Fry the minced beef in the frying pan along with the salt, pepper and cumin, breaking up the larger chunks of the mince until its completely browned all over.  This should take about 5 minutes.

Remove the cooked mince (keema) from the frying pan with a slotted spoon, leaving the oil behind and place in a bowl for later.

Turn the heat down to medium and add in 1 tsp of the ghee (or oil) to the pan.

Add the diced onion to the frying pan.  Cook for 4-5 minutes, stirring occasionally, until the onion starts to soften.

Add in the minced garlic, minced ginger, tomato puree, curry powder, garam masala and ground coriander to the pan and fry for a minute stirring continuously until the spices start to release their fragrance.

Next in goes the tinned tomatoes and water, stir everything together, and bring to a gentle simmer.

Add in the cooked mince (keema), stir again and allow to simmer for 5-6 minutes

Now add in the frozen peas, stir again and cook for another 2 minutes to heat through the peas.

Serve with some fresh corinader along with boiled rice, mango chutney and your favourite naan bread or chapati.
