Biscoff S&#039;mores Brownies has layers of Biscoff cookies, fudgy brownies, roasted marshmallows and Biscoff spread.

Biscoff S'mores Brownies

Cups Biscoff Cookies (or Graham crackers), Crushed ((150 grams))

Cup Butter, Melted ((55 grams))

Cup Dark Chocolate ((190 grams))

Cup and 2 Tbsp. Butter ((170 grams))

Sugar ((75 grams))

Cups Brown Sugar ((140 grams))

Large Eggs

tsp Vanilla Extract

Cup Cocoa Powder ((31 grams))

1 and 1/4 Cups All Purpose Flour ((155 grams))

Regular Sized Marshmallows

Cups Biscoff Spread (or Cookie Butter) ((150 grams))

Biscoff Cookies or Digestive Biscuits (Graham Crackers)

Line a 9'x9' square baking pan with baking paper or grease with butter.

Crush the Biscoff cookies (digestive biscuits or graham crackers) and mix with the melted butter.

Press into the base of the prepared baking pan and place in the fridge while you make the brownies.

Base;

Preheat the oven to 180°C (350°F).

Melt the dark chocolate and butter together.

Beat the eggs, sugar, brown sugar and vanilla extract together until light in colour.

Stir through the chocolate mixture.

Stir in the flour and cocoa

Spread the brownie mixture over the base. Spoon in 8 tablespoons of the Biscoff spread and swirl through the brownies.

Place in the oven for 25-35 minutes.  A skewer inserted in the middle should have loose crumbs attached. The middle may be a bit wobbly if you want a super fudgy brownie.

Top with the marshmallows and broken pieces of the extra Biscoff cookies and place back in the oven on the top rack for a further 2-5 minutes. The marshmallows will spread and turn golden on top.

Allow to cool for 10 minutes before melting the remaining Biscoff spread and drizzling over. Serve warm or allow to cool in the fridge for an hour or two.

Biscoff adds another layer to these decadent chocolate brownies - literally. Because hiding underneath that gooey brownie top is a layer of crushed biscoff biscuits, kinda like a cheesecake base.

Soft, chewy, and packed with chocolate chunks, and a melty middle of cookie butter spread. these small batch brownies are everything you&#039;d want in a regular brownie but made smaller and filled with Biscoff cookie butter! try it today :)

Easy small batch cookie butter brownies recipe

cookie butter (rounded)

tbsp butter

tbsp oil (vegetable

brown sugar

tsp vanilla extract

tsp salt

all purpose flour

cocoa powder

chocolate chunks

Start by preheating the oven to 325F then line a 9x5 or an 8x5 loaf pan with parchment paper then set aside.

Slightly melt the cookie butter in the microwave or over a double boiler and pour it into the prepared lined loaf pan, place in the freezer and allow to chill fully. This can take 15-30 minutes depending on how hot the cookie butter was.

In a large bowl melt the butter and the oil in the microwave or on the stove top in a medium saucepan.

If you melted the butter in a saucepan transfer to a large bowl, if not just add in the granulated sugar and the brown sugar to the butter and whisk until the mixture is fully combined.

Add in the egg and the vanilla and whisk to combine. Whisk in the flour, cocoa powder, and salt until the flour mixture disappears. Fold in the chocolate chunks.

Pour 1/2 of the brownie batter into the prepared baking pan (remove the frozen cookie butter sheet first), spread it evenly then place the frozen cookie butter sheet on there again. Top with the rest of the brownie batter, spread the brownie batter to cover the full loaf pan, and bake in the preheated oven for 28 minutes.

You will know your brownies are ready when you insert a toothpick in the center and it comes out with just a few wet crumbs.  Let the brownies cool down completely before slicing into them and enjoying!

A really easy &amp; tasty brownie. My son loves cookie butter so I knew this would be a good one to try!  I doubled the recipe and made in an 8x8 pan. Soft, fudgy &amp; so good!  Will definitely make again!
