Biscoff cookies

Preheat the oven to 350 degrees F. Line a cookie sheet with parchment paper.

Mix together the dry ingredients - Combine all purpose flour, baking soda, baking powder, and kosher salt in a bowl. Whisk together and set aside.

Add room temperature butter and creamy cookie butter spread to a large bowl. Use a stand mixer with the paddle attachment or an electric hand mixer to cream the two ingredients together for about 2 minutes, until fluffy and lighter in color. Then add brown sugar and white sugar and continue to mix for another 3 minutes.

Add egg and egg yolk and vanilla extract and mix until fully combined. Scrape down the sides of the bowl as needed. Fold the dry ingredients into the wet ingredients with a rubber spatula until just combined and all flour streak are gone.

Use a large cookie scoop or spoon to scoop out 2 1/2 tbsps of dough. Roll into cookie dough balls and place on prepared baking sheet. Bake for 12-14 minutes, until crispy edges begin to form. (Pro tip: it is better to under bake cookies than to overcook them!)

Pull them out of the oven and let the cookies cool on the baking sheet for 3 minutes then allow them to cool on a wire rack until completely cooled.

Use the back of a spoon and gently tap the center of the cookies to make a "well" for the biscoff. Spoon about 1 tbsps of the lotus biscoff spread on top of the baked cookies. (If biscoff is stiff, microwave for about 30 seconds until melted) Add crumbled biscoff cookie crumbs and broken lotus biscoff cookies on top.

These vegan Biscoff butter cookies are super chewy, soft, and full of delicious cinnamon and brown sugar flavors, just like Biscoff cookie butter. They are so easy to make in one bowl and they're ready in just 25 minutes. These are the perfect cookies for fall and holiday events!

Biscoff Butter Cookies (Vegan)

vegan butter (slightly softened)

Lotus Biscoff Cookie Butter

organic cane sugar

organic brown sugar (loosely packed)

flax egg (1 tablespoon flax + 3 tablespoons water)

vanilla extract

all-purpose flour

baking soda

salt

cinnamon

vegan chocolate chips

pecans (or walnuts)

⅔ cup crushed Lotus Biscoff cookies (for topping)

Prepare flax egg.

Prepare the flax egg in a small dish by stirring together 1 tablespoon of ground flax seed with 2-3 tablespoons of water. Set aside to thicken for 5-10 minutes.

Preheat oven and prepare pan.

Preheat oven to 350°F and line a large baking sheet with parchment paper.

Beat butter and biscoff.

In a stand mixer or large bowl with an electric mixer, beat the vegan butter and Biscoff cookie butter until smooth and creamy.

Add cane sugar and brown sugar.

Add the cane sugar and brown sugar to the bowl and mix for another 1-2 minutes, until light and fluffy. Then mix in the flax egg and vanilla extract until combined.

Mix in dry ingredients.

On low speed, mix in the flour, baking soda, salt, and cinnamon until just combined. Be very careful not to over-mix the dough! If desired, mix in vegan chocolate chips or chopped pecans.

Scoop dough into balls.

Use a medium cookie scoop to form evenly sized cookie dough balls, about 1 ½ tablespoons of dough per cookie. Place the dough onto the baking sheet, leaving 2-3 inches between each.

Bake the cookies.

Bake the cookies for 12-15 minutes or until the edges appear slightly firm and golden brown. The centers should appear softer and slightly under-baked. Remove the cookies from the oven and allow them to cool on the pan for 10 minutes before gently transferring them to a cooling rack.

Garnish and serve.

If desired, sprinkle sea salt or Lotus Biscoff cookie chunks on top of the cookies while they are still warm. Enjoy!

Biscoff Butter Cookies are made with rich cookie butter, crushed Biscoff cookies, cinnamon chips, and melted white chocolate in the center.

flour

butter

white sugar

cookie butter

vanilla

Biscoff cookies (crushed)

cinnamon chips

chocolate

finishing salt (garnish, optional)

In a mixing bowl, whisk flour, salt, and baking soda together and set aside.

In a separate bowl, cream butter, brown sugar, and white sugar for 2-3 minutes.

Add egg, ½ cup of cookie butter, and vanilla to the butter and sugar and mix for another 2-3 minutes.

Add the flour mixture to the wet ingredients and mix just until flour is fully incorporated. Do not over-mix.

Fold in the crushed Biscoff cookies and cinnamon chips.

Using a 1.5-tablespoon cookie scoop, take a scoop of cookie dough and form an impression in the center. Place one piece of white chocolate into the impression, then take another scoop of cookie dough and place it on top. Mold the two pieces together to form a ball, making sure to seal any gaps. Repeat with the remainder of the dough.

Place the dough balls in an airtight container and chill for 30 minutes. You can chill longer than 30 minutes if you'd like, but make sure not to skip the chilling. This will help intensify all of the flavors and will also prevent the cookies from spreading too much while baking.

When ready to bake, preheat the oven to 350°F.

Place the cookies on a parchment-lined baking sheet at least 2-3 inches apart and bake for 15-17 minutes. When ready, the cookies will be slightly browner around the edges.

Remove the cookies from the oven and sprinkle with finishing salt if you choose. Allow them to cool and set for 5 minutes before transferring them to a cooling rack to cool completely.
