My recipe today for The Queen&#x27;s Chocolate Biscuit Cake is a variation on one I have been making for years, without realising that it was Her Majesty the Queen&#x27;s favourite cake. It was a favourite for birthday parties and the cake tin, with my daughter taking a small square to school in her lunch box sometimes. 

Apparently, Her Majesty is so fond of this recipe for The Queen&#x27;s Chocolate Biscuit Cake, that she has it daily in the afternoon with a cuppa, and will enjoy a slice every day until it is all gone. I love this idea that The Queen is a bit of a chocoholic, and enjoys a simple no-bake cake above other more complex cakes.

The Queen's Chocolate Biscuit Cake

Cake:

Rich Tea biscuits

unsalted butter

golden caster sugar

dark chocolate, 53% minimum cocoa solids, chopped

This easy lazy cake recipe is a delicious no-bake chocolate dessert. It&#39;s incredibly easy to make with just a few, simple ingredients.

Lazy Cake Recipe

(250 milliliters) fresh milk

(60 grams/2 ounces) unsweetened cocoa powder

(200 grams) sugar

(45 milliliters) cognac (optional)

(100 grams) chopped nuts (I use

(5.3 ounces)

Butter and line the bottom and sides of your pan. If you have a pastry ring, just butter and line the sides. Set aside.

In a medium saucepan, add the milk, cocoa powder, sugar, butter, and the 25g/1oz chopped chocolate. Whisk continuously over medium heat and bring to a boil. When it starts boiling, lower the heat and let it simmer for 5 minutes while whisking. It’s important not to stop whisking so the mixture doesn’t burn. After about 5 minutes, it will thicken slightly.

Remove the saucepan from the heat and whisk in the vanilla and the cognac (if using). Set it aside to cool a bit.

In a large bowl, use your hands to break the cookies into medium and small pieces.

Pour the chocolate mixture over the cookie pieces. Add half of the nuts (½ cup/50g) and stir everything with a rubber spatula or large spoon. Make sure to coat everything well.

Transfer the mixture to the prepared pan and press it in using the spatula or the back of a spoon. Even out the surface. Refrigerate the cake for about 30 minutes.

Heat the cream in a small saucepan until it just begins to boil and tiny bubbles appear on the sides of the saucepan. Don&#39;t boil it.

Pour the hot cream over the chopped chocolate (150g) and let it sit for 5 minutes without stirring. After 5 minutes, stir the mixture until it’s smooth and creamy and the chocolate has melted.

Take the cake out of the refrigerator and pour the ganache on the top. Use the back of a spoon to spread it evenly.

Add the remaining nuts on top.

Cover the cake loosely with plastic wrap and refrigerate it overnight. This is the most important step! The cake needs to be refrigerated overnight to solidify properly and allow all the flavors to develop.

Unlatch the pan and remove the parchment paper. Slide the cake onto a plate or cake stand.

Biscuit Cake | Chocolate Biscuit Cake (No Bake Recipe)

instant coffee

chocolate (or ½ cup chopped or broken chocolate)

glucose biscuits ((can use marie biscuits or sweet crackers

First assemble all the ingredients.&nbsp;

Line a cake pan or a loaf pan with parchment paper, butter paper or aluminium foil. You can use any medium sized cake pan.

Preparation

Take water in a small sauce pan and warm it. The water should be warm or slightly hot.

Then take the warm water in a bowl.&nbsp;add ½ tablespoon instant coffee.

Mix very well. Keep aside.

Making coffee solution

Next milk in the same sauce pan.&nbsp;add 1 tablespoon cocoa powder.

Mix very well to solution without any lumps.

Then add 1 tablespoon sugar.&nbsp;

Keep the pan on stove top and keep the flame to a low.

With a wired whisk stir so that all the sugar dissolves.

Let this cocoa mixture come to a boil.

After it comes to a boil, then continue to simmer for 2 to 3 minutes on a low to medium-low flame. Stir often.

After 2 to 3 minutes, switch off the flame and add the chopped chocolate.

Keep the pan down and begin to mix.

The heat of the cocoa solution will melt the chocolate. Mix to a smooth glossy consistency.&nbsp;

At this point you can add some chopped nuts or dry fruits if you want.

Making chocolate sauce

Take each glucose biscuit and begin to dip in the coffee solution. If using glucose or marie biscuits or digestive biscuits, then just dip and remove in a second. Do not keep for more time as biscuits will break.

You just need to coat the biscuits with the coffee syrup.

Then place the biscuit in the pan with the parchment paper. Similarly dip each biscuit in the coffee syrup and line the pan with a single layer of biscuits.

Also make a second layer. Depending on the size of the pan, you can make 2 to 3 layers.

Now pour half of the chocolate sauce on the biscuit layers and spread it evenly but gently with a spatula. You can also tilt the pan slightly so that the chocolate sauce spreads all over evenly.

Make another third and fourth layer of coffee solution dipped biscuits.

Finally pour the remaining chocolate sauce and spread it evenly.

Seal the pan with a lid or with a foil. Keep in fridge and let the biscuit cake set for 4 to 5 hours. You can also keep overnight.

Now carefully lift the sides of the parchment paper and keep biscuit cake on a chopping board or tray.&nbsp;Slice the cake gently.

The chocolate biscuit cake will have layers. So while serving you can serve in such a way that the layers can be seen. 

Serve biscuit cake as a dessert after meals or as a sweet snack.
