This is so good!  I've made it twice now and my husband has gone back both times for seconds.  I love how simple it is to put together and it's so full of flavour!

This was so good! The only thing I did different was add a bit of cilantro lime sour cream on top. Next time I'll add a bit of onion to the salsa mix. Delicious!

This is one of the best recipes I have ever found on the internet!! Plus adding black beans to the corn salsa made it even better!!

These Easy Blackened Cajun Shrimp are so flavorful &amp; only take 10 minutes to make. You can eat them on their own or add them to your favorite salad or pasta.

Blackened Cajun Shrimp

shrimp

olive oil

garlic (pressed)

tsp salt

oregano

tsp black pepper

cayenne

Start off by thawing out your shrimp and removing the shells. I like to leave the tail on but you can remove that as well if you want.

Now place the raw shrimp in a large bowl and mix it with olive oil, freshly pressed garlic, salt, onion powder, oregano, black pepper, and cayenne (optional).

Then melt butter in a skillet over medium heat and cook the shrimp a few minutes on both sides until they are pink and opaque. ￼

Serve warm with rice or make into it an Alfredo shrimp recipe with pasta and Alfredo sauce.

Sensational Baked Blackened Shrimp Recipe

tsp blackened seasoning (ground)

tsp pepper (ground)

olive oil (extra virgin)

Preheat oven to 400F° and place a cooling rack on&nbsp;a&nbsp;baking sheet. &nbsp;Spray the rack with non-stick cooking spray.

In a medium-sized bowl, drizzle raw shrimp with olive oil until they are lightly coated. Add blackened seasoning, and salt and pepper. Mix until coated.&nbsp; You can allow them to marinate in the refrigerator for 30 minutes or cook immediately.

Lay shrimp on the prepared rack. Bake undisturbed for 8 to 10 minutes. Don't overcook.

Garnish with the fresh parsley if desired. &nbsp;Serve immediately or cover and refrigerate.

Blackened Shrimp

chili powder

oregano (dried)

brown sugar

salt

pepper

shrimp (uncooked, peeled)

garlic (minced)

cilantro (fresh, chopped)

lime wedges

Combine the chili powder, paprika, cumin, oregano, garlic powder, brown sugar, salt, and pepper in a bowl. Dump the mixture over the shrimp and mix well. Set aside to marinate for 30 minutes.

Heat the olive oil in a skillet over medium-high. Arrange the shrimp in a single layer and cook for 2 minutes. Flip and cook for another 2 minutes.&nbsp;

Add the garlic, stir, and cook for 30 seconds. Garnish with cilantro and lime wedges to serve.

Pineapple Shrimp Luau

pineapple

corn kernels (fresh

split pineapple down the middle completely through the stalk and pineapple

run a pairing knife along the edges of pineapple trying not to puncture the skin

angle knife to cut sections of pineapple out. As you remove sections it will get easier to remove all of the edible section of the pineapple.

remove the core from the pineapple and discard. You will have more pineapple than you need for this dish, save remainder for later use.

Cook rice according to directions.

saute corn, onion, peppers and pineapple in butter for 5-7 minutes until onion is cooked. Set aside until ready to mix with shrimp

Peel and devein shrimp, pat dry and dredge in your favorite cajun seasoning to blacken shrimp. If you don't like spicy foods, use old bay or paprika to add color.

lightly blacken the seasoned shrimp over medium-high&nbsp;heat in one teaspoon until fully cooked.&nbsp;

Mix cooked rice with pineapple mixture and shrimp.

Fill pineapple halves with mixture, making sure you can see the shrimp towards the top of the mixture.

Garnish with cilantro and scallions and serve immediately.

An amazingly quick and easy curry filled with plump shrimp and juicy bell pepper. The coconut sauce is ultra creamy, slightly spicy and can’t-stop-eating-delicious.

Thai Coconut Shrimp Curry

soy sauce

½ tsp red pepper flakes

turmeric

¼ tsp white pepper

vegetable oil

unsalted butter

bell pepper (sliced)

garlic

tbsp ginger

shallot (finely chopped)

broth

tbsp mild red curry paste

½ tsp turmeric (ground cumin, ground coriander)

tbsp fish sauce

full fat coconut milk ((14 oz/400 ml) coconut milk)

lime (juiced)

tsp sriracha (optional)

torn thai basil

onions

chili pepper

Get all the prep done before you start cooking. Add shrimp, soy sauce, red pepper flakes, turmeric, garlic powder and white pepper to a bowl. Stir to combine, set aside.

Grate the ginger and garlic cloves. Finely chop the shallot and slice the bell pepper.

Heat oil and butter in a large skillet over high. Place shrimp in a single layer. Sear, 1 minute per side. Remove from skillet.

sautéing

In the same skillet, add bell pepper. Sauté for 5 minutes, or until it starts to soften. Add garlic, ginger and shallot. Cook until soft and fragrant, about 2 minutes. Deglaze with chicken broth, simmer for 2 minutes while stirring and scraping up the brown bits on the bottom of the skillet with a wooden spoon.

Stir in red curry paste. Add brown sugar, turmeric, cumin, coriander, white pepper, soy and fish sauce. Cook for 1 minute, stir frequently. Pour in coconut milk and bring to a boil. Simmer for 5 minutes or until the sauce starts to thicken.

Add lime juice, sriracha and Thai basil. Stir to combine. Toss in shrimp, simmer for no longer than 1 minute. Top with cilantro leaves, fried onions and chili pepper. Serve with a crunchy cucumber salad and steamed rice. Enjoy!

This was fantastic! I also added broccoli &amp; baby corn. I sampled as I was cooking fully expecting to add more soy sauce or sriracha or turmeric but nope —it was already perfect! It took about 30 mins to make and there was a fair bit of cleanup afterwards but it was totally worth it!

It’s was fun to make and we added tofu, lime zest, and extra bell peppers.. sautéed onions with bell peppers. I’ll make this again, but probably use less red curry paste, no red pepper, and more coconut milk to our liking. Husband couldn’t finish it and I sweated  threw it lol . Otherwise a good recipe. Any other suggestions to make it a little less spicy?

OMG—This may just be the best dinner I’ve ever made! Didn’t have bell pepper so put in yellow squash. Also used yellow curry paste instead since that’s all I had. Thank you for a great recipe!!

Made this a couple of nights ago and it was/is delicious! ( have to dial back the Thai chili paste next time: I loved it but too much for one: she actually had coffee ice cream immediately after to cool palate!😉). Definitely a keeper !!

This is a great recipe, although I’ve never seen “mild red curry paste” and so the curry I made was definitely not kid friendly.  Good thing my fridge is jammed with stuff for my kiddo!  Definitely will make again.  I even added another can of coconut milk and it is still pretty darn spicy!

This dish was to die for. As usual with Anna's recipes, the prep work was work every chop, slice, and measure. My husband could not stop eating it and I was right behind him. I followed the recipe exactly as written down to the garnish suggestions. I always find that these recipes are tried and tested so I don't mess with the measures and they always turn out for me. Such a tasty dish with such a true Thai flavour explosion. Thumbs up for this one! Will definitely be adding this to my favourites list. Thank you.

Season the shrimp.

In a medium sized mixing bowl, toss the shrimp with the blacken seasoning.

Cook the shrimp.

Heat a large non-stick skillet over medium-high heat. Cook the shrimp for 2-3 minutes, then flip and cook for an additional 2-3 minutes, until fully cooked.

Prepare the bowls.

Mix the cooked rice with cilantro and lime juice and zest. Then divide rice between meal prep containers. Layer with corn, pickled onions, lettuce, cotija cheese, and tortilla strips.
