Cook

Heat the oil in a medium pan over medium-high heat. Add the tomatoes and let them sit undisturbed in the pan for 2 minutes, to blister on the bottom.

Add the garlic, salt, and pepper, then stir together with the tomatoes. Let them cook and blister another 2-3 minutes, stirring a few more times.

Serve

Remove the blistered tomatoes from the heat, then top with chopped basil or other fresh herbs.

This Paleo Sheet Pan Herbed Salmon with Green Beans and Cherry Tomatoes is simple, yet elegant enough to serve to company! It's also the perfect easy one sheet pan recipe for meal prep!&nbsp;

Sheet Pan Herbed Salmon with Green Beans and Cherry Tomatoes {Paleo}

thyme

marjoram

lb. green beans, de-stemmed (225 g)

cherry tomatoes (170 g)

salmon

garlic (minced)

sea salt (to taste)

Preheat oven to 400F/200C degrees.

Mix together all chopped herbs, garlic, lemon and olive oil in a small bowl.  Season with salt and pepper to taste and stir.  Set aside.

Line a sheet pan with foil, then add green beans in one even layer, then cherry tomatoes and salmon fillets.  Drizzle olive oil (about 2-3 tablespoons) over green beans and cherry tomatoes.  Sprinkle minced garlic over vegetables, then use your hands to coat everything well.

&nbsp;Add herb mixture evenly between salmon filets. Sprinkle with flaky sea salt and freshly ground pepper. Bake for 20 minutes or until tomatoes have burst, beans are tender and salmon is cooked through. Squeeze lemon juice over top and serve immediately.

Toasted baguette slices, raw sliced veggies, toasted pita or naan.

Place a rack 10 inches from the broiler. Preheat oven to 450ºF.

Place the cherry tomatoes, sliced garlic, and herbs in a small baking dish or oven-proof skillet. Drizzle with olive oil and honey and season with 1/4 teaspoon salt and pepper to taste. Toss to combine. Roast until tomatoes are soft and beginning to burst, about 15-20 minutes. Switch the oven to broil setting and broil until tomatoes are blistered and charred, about 5-7 minutes. TIP: The heat from a broiler will vary greatly depending on your oven so check on the tomatoes throughout the broil time to make sure they aren&#39;t burning.

While the tomatoes roast, combine the feta cheese, yogurt, olive oil and lemon zest in the bowl of a food processor. Process until smooth, about 2 to 3 minutes, scraping down the sides of the processor bowl as necessary. Spread mixture onto a large shallow serving plate and place in refrigerator to chill for at least 20 minutes. (Cover if refrigerating longer.)

Top chilled whipped feta with the warm roasted cherry tomatoes and all the juices. Drizzle with extra virgin olive oil and flaky salt, if using. Serve immediately with toasted baguette slices, if desired.

Preheat the broiler/grill on high and set the oven rack in the top position. 

Simmer the oil, garlic and red pepper flakes in a large skillet over low heat for 2 minutes or so, to soften and mellow the garlic. Add the tomatoes and a pinch or two of salt, and simmer for 3-4 minutes, until the tomatoes start to soften and release their juices. 

Pour tomatoes and juices into the casserole, use a spoon to clear an area in the middle of the pan, and add the blocks of feta. Alternatively, if using a cast iron skillet or another oven-ready skillet, you can skip the casserole dish and simply add the blocks of feta to the skillet. 

Place the pan in the oven, under the broiler, for 3-4 minutes, until the feta is soft and golden brown in spots, and some of the tomatoes have blistered. 

Serve this dish hot, straight from the pot. Sprinkle on the fresh basil, set the pot out on the table on a trivet, alongside a basket of fresh sliced baguette or crostini (see notes), with a serving spoon, small appetizer plates or shallow bowls, and teaspoons.
