BLT Chopped Salad

bacon

julienned sun-dried tomatoes

kale

salt

cherry tomatoes (halved)

sweet corn kernels (fresh, frozen and thawed,

feta cheese

lime juice (from about 2 medium limes)

olive oil

smoked paprika

Bake

Preheat oven to 400 degrees F. Bake the bacon according to these directions for Baked Bacon. Once cooked, remove to a plate and pat dry. Let cool, then chop.

Rehydrate

Meanwhile, place the sun-dried tomatoes in a small bowl. Top with very hot water and let sit for a few minutes to rehydrate while you prepare the other ingredients. Drain and pat dry.

Massage

Place the chopped kale in a large serving bowl. Sprinkle with kosher salt. Massage with your hands by grabbing large handfuls a few at a time and squeezing gently until the kale is darker in color and more fragrant (this step makes the kale more tender and less bitter in taste—don’t skip it!). 

Add the drained sun-dried tomatoes, cherry tomatoes, corn, bacon, feta, and green onion.

Toss

Prepare the dressing: In a small bowl or large measuring cup, stir together the lime juice, olive oil, smoked paprika, and salt. Drizzle over the salad and toss to coat. If time allows, let rest in the refrigerator for 15 minutes or serve immediately.

Inspired by maybe the most popular summertime sandwich, the BLT Salad has bacon, lettuce, tomato and a delicious sour cream and mayo creamy dressing. This is a perfect main dish for lunch or a side dish for any other meal  - a BLT Sandwich in salad form!

5 Ingredient BLT Salad (Breadless!)

Iceberg Lettuce (diced)

Tomatoes (diced)

Bacon

Sour Cream

Mayonnaise

Salt & Pepper,

 Cook bacon in a large skillet over medium heat until it&#8217;s crispy and golden brown. Drain it on a paper towel-lined plate. Be sure to cook it until it&#8217;s nice and crispy &#8211; no floppy bacon for this BLT Salad.

 Dice up your fresh lettuce and tomatoes.

 Add all your ingredients to a large bowl.

 Serve with salad tongs or a slotted spoon right away and enjoy!

We made this quick and easy salad to use up some of our tomatoes from the garden!
