Homemade and easy to make, this Healthy Blueberry Baked Oatmeal makes for a delicious breakfast and is perfect for meal prep. With its warm cinnamon and vanilla flavors, complete with blueberries and sliced almonds this recipe is one you'll make again and again.

Healthy Blueberry Baked Oatmeal (Gluten-free) 

¾ cups old fashioned rolled oats

Tbsp. chia seeds (optional)

baking powder

salt

cinnamon

nutmeg

maple syrup or honey (use 3 tablespoons for less sweet)

banana, mashed (~½ cup) or applesauce

eggs

milk of choice

unsalted butter or coconut oil

pure vanilla extract

½ cups frozen blueberries, do not thaw (may sub fresh)

Preheat the oven to 375℉. Spray a 9×9 or 8&#215;8-inch baking dish with cooking spray.

In a bowl, combine all of the ingredients and mix. 

Transfer to the prepared dish. Top with a few additional frozen berries and sliced almonds, if desired.

Bake for 30-35 minutes or until center is set. 

Top with whipped topping or yogurt and maple syrup if you please.

This recipe is so easy and so good!  I subbed unsweetened applesauce for the bananas (because that’s what I had) used pecans, unsweetened almond milk and maple syrup. It was just sweet enough and perfect with plain yogurt and a little maple syrup. Will definitely make again.

I love all of their baked oatmeal recipes. I usually make it ahead and freeze half. That way I have weekday breakfasts locked up for two weeks. The recipe is flexible too. Using any frozen fruit I have on hand works the same. I’ll also change up the bits and add in collagen peptides.

So easy and amazing!!! Perfect meal prep to have for a quick breakfast. I used a little less oats and added a half cup of collagen protein to boost protein even more. This will definitely be in the weekly rotation for my family and clients!

You can prep this easy baked oatmeal recipe the night before for an easy morning, but if you want to bake it right away, I&#039;ve included some instructions in the notes section below.

Blueberry Baked Oatmeal

old fashioned oats

milk

applesauce

walnuts

eggs (see notes for substitute)

maple syrup (OR brown sugar)

vanilla extract

blueberries (fresh and frozen both work)

Mix the ingredients: Add the oats, milk, applesauce, walnuts, eggs, maple syrup, vanilla, cinnamon, baking powder and salt to a large bowl. Mix well.

Layer in a casserole dish: Lightly grease a 7x11 inch rectangular baking dish. Spread half the oat mixture in the bottom of the dish. Sprinkle with about 3/4 of the blueberries. Top with the remaining oat mixture, carefully smoothing the top. Sprinkle on the remaining blueberries. You can also sprinkle on some extra walnuts if you like!

Chill the dish: Cover the casserole dish and chill in the refrigerator overnight (see notes for instructions to bake right away)

Bake the dish: The next morning, remove the dish from the fridge. Preheat the oven to 350°F. Bake until set and golden on top, about 30-35 minutes. Rest for 5 minutes on a rack on the counter, then slice and serve warm.

Healthy Blueberry Baked Oatmeal

almond meal/flour

tsp baking powder

sea salt

coconut sugar (or any granulated sugar of your choice)

TBS melted butter (or coconut oil)

milk (regular, almond, coconut etc.)

Vanilla Greek yogurt (or your favorite kind)

tsp pure vanilla extract

cinnamon sugar

Preheat oven to 350 degrees F. Grease a 9x13” glass baking dish and set aside.

In a small bowl, combine oats, almond meal, baking powder, baking soda, salt sugar and cinnamon. Set aside.

In a separate, small microwave safe bowl, melt butter (or coconut oil).

In a large bowl, whisk together Greek yogurt, eggs, and vanilla and whisk until combined.

Add melted butter and milk and whisk until combined.

Add dry ingredients to wet ingredients and mix well.

Gently fold the blueberries into the mixture.

Spread evenly in a 9x13” pan.

Sprinkle cinnamon sugar over the top of your oatmeal.

Bake at 350 degrees F for 30-40 minutes (shorter if using fresh berries, longer if using frozen). The oatmeal should be browned on the top and the top should spring back when you gently touch it with your finger.

Let cool for 15 mintues and serve warm. You can also refrigerate after baking and serve cold!

Lightened Up Blueberry Breakfast Crumble

oatmeal (old fashioned or quick cooking work well)

¼ tsp kosher salt

ripe, spotty banana

almond butter

maple syrup

pecans

oz blueberries

tbsp flour

Preheat oven to 375 degrees.

Add the oats, cinnamon, and salt to a mixing bowl and stir to combine. Mash the banana and add it to the bowl along with the almond butter and maple syrup. Mix well and stir in the pecans. Set aside.

Prep

Then toss the berries with flour. Coat evenly and then transfer to a baking dish. Top with the cinnamon oat mixture and bake for 45 minutes or until golden brown and bubbly around the edges. Note:  Make sure you bake it long enough. I find that this crumble usually needs the full 45 minutes in my oven but it starts to look done around 30 minutes, so don&#039;t be fooled and pull it out too soon! You want the top to get a little crispy on top :)

Bake

Top with a dollop of plain, unsweetened vegan yogurt, a drizzle of almond butter, and some fresh fruit like berries or apple slices if desired. Fun twist: if you&#039;re seving this as a healthy dessert, top these warm berry crumble with a scoopo of vegan ice cream or some coconut whipped and your favroite toppings! So good :)

This blueberry baked oatmeal is the best way to start the day! It's hearty, cozy-spiced and works for breakfast all week long.

Easy Blueberry Baked Oatmeal

egg egg

milk milk

brown sugar

neutral oil (or melted refined coconut oil)

almonds (optional)

allspice

blueberries, divided (washed and dried)

Maple syrup, to serve (and/or nut butter)

Preheat the oven to 375 degrees Fahrenheit.*

Butter an 8 x 8″ or 9 x 9″ pan or 7 x 11 small casserole dish (shown). Place roughly half of the blueberries in the bottom.

In a medium bowl, whisk the egg, then whisk in the milk, brown sugar, oil, and vanilla. Add the rolled oats, sliced almonds, baking powder, cinnamon, allspice, and kosher salt. Mix thoroughly to combine them into the wet ingredients, mixing until all the spices are integrated. 

Pour the oatmeal mixture into the prepared pan (many of the blueberries will float, which is ok). Add the remaining blueberries in a layer on top.

Bake 30 minutes until the oat mixture has set. Remove from the oven and allow to cool for at least 10 minutes. (The texture will fully set once it cools to room temperature.)

Before serving, drizzle maple syrup. Store leftovers refrigerated for up to 1 week: eat cold or reheat in a 300 degree oven or microwave until warm.

This recipe is absolutely delicious!!! I used a half cup of brown sugar Splenda instead of honey. I also added walnuts rather than almonds. I will be making this again!!!!
