This layer Lemon Blueberry Cake is soft and moist with a delicate crumb. Packed full of blueberries and bursting with tangy lemon flavour. Paired with a cream cheese icing to round it all off.

Lemon Blueberry Cake

Cup Butter, Softened ((220 grams))

Cup Sugar ((200 grams))

Cup Brown Sugar ((100 grams))

Large Eggs

Tbsp. Vanilla Extract

Lemon Juice ((125 milliliters))

Lemon

3 and 1/2 Cups All Purpose Flour ((435 grams))

Tbsp. Baking Powder

Cup Milk ((250 milliliters))

250 g Blueberries ((1 and 3/4 cups))

Tbsp. All Purpose Flour

Cup Cream Cheese ((250 grams))

Cup Butter, Softened ((110 grams))

2 and 1/2 - 3 Cups Icing Sugar ((320-380 grams))

tsp Vanilla Extract

Preheat the oven to 180°C (350°F) and grease and line two 24cm or 9&quot; round spring form cake pans and set aside.

In a large bowl and with a stand or hand mixer, cream the butter, sugar and brown sugar together until light and creamy.

Add in the eggs and vanilla extract and beat together.

In a separate bowl, mix the flour and baking powder together.

Fold half of the dry ingredients into the wet ingredients and mix until all combined.

Add in the lemon juice and lemon rind and mix together.

Add in the remaining half of the dry ingredients and mix through. Add in the milk and mix until the mixture is just combined.

Toss the fresh blueberries through the flour until all blueberries are coated. Add into the batter and lightly fold through. Do not over mix!

Pour the batter into the two cake pans and place in the oven to bake for around 25-35 minutes.

Baking time will vary depending on your oven. I checked mine after 30 minutes by inserting a skewer in the middle of the cake. Mine ended up taking 35 minutes but check at 20 minutes onwards to ensure you don&#39;t over bake.

Allow the cake to cool for 10 minutes in the cake pans before removing from the pan and placing on a cooling rack to cool completely while you make the cream cheese icing.

Lemon Blueberry Cake;

Beat the butter until smooth.

Add in the cream cheese and beat together until smooth.

Add in the vanilla extract and slowly add the icing sugar until all combined.

If your cakes have domed, take a large, serrated knife and level the cakes.

Using 1/3-1/2 of the icing, fill the cake. You can pipe this or spread this.

Then cover the top half of the cake and decorate with the remaining icing. You can cover the sides, pipe like I have or however you like.

This delicious blueberry bread recipe is such a delicious quick bread! Just like a moist sweet blueberry muffin but all in one loaf shape that is perfect for a breakfast treat or a sweet dessert. Make this with fresh or frozen berries too!

flour (all purpose, plus one teaspoon for blueberries)

Preheat oven to 350 degress. Cut a piece of parchment paper the size of the pan so it lays over the pan from left to right. Lightly oil the other two sides of the pan not covered in parchment.

Cream together the softened butter and the sugar until the sugar is fully mixed into the butter with spatula or electric mixer.

Add beaten eggs, milk and vanilla to your bowl and mix well until combined.

In a second bowl add 2 cups of flour, baking powder and salt and combine until mixed.

Add the flour mixture to the wet ingredients and stir until just combined. Be careful not to overmix.

In a small bowl add blueberries and sprinkle with a teaspoon of flour, then stir the blueberries so the flour mixes evenly.

Fold half of the blueberries into the batter, then add the batter to the pan. Add the remaining blueberries to the top of the batter and swirl with a spoon.

(Optional) Sprinkle the top of the loaf with 1-2 tablespoons of sugar. A course sugar works best, see the notes for more details.

Bake in the oven for 70-85  minutes or until completely cooked through. Check with a toothpick by inserting into your loaf ( I start checking at 60 minutes to be safe- ovens can sometimes vary), and making sure the toothpick doesn't have raw batter clinging to it. (It may have blueberry, that's ok!)

Let the blueberry bread cool for 10-15 minutes, then remove from the pan. It slices a lot easier if you let the bread cool completely. Enjoy!

Lemon Blueberry Bread is made in 1 bowl with fresh blueberries, lemon zest, and a bright lemon and vanilla glaze. It’s a perfect summer dessert!

Preheat the oven to 350 degrees and grease a standard metal loaf pan (9x5 inches or 8 1/2x 4 1/2). You can also line the pan with parchment paper for easy removal, but I like the golden edges it gets without lining it.

In a large bowl, whisk together the soy milk, sugar, lemon zest, lemon juice, lemon extract (if using), melted vegan butter and vanilla until well combined.

To the bowl with the wet ingredients, add the flour, baking powder and salt. Stir until just combined, being careful not to over mix or your bread will be dense.

Rinse the blueberries, then toss them with the flour in a small bowl. This will help them not sink to the bottom of the pan while baking.

Fold the blueberries into the batter, gently.

Pour into the prepared pan, place in the center rack of the oven and bake for 60-75 minutes, or until a toothpick inserted in the middle comes out clean with no wet batter.

Cool in the pan for about 30 minutes, then carefully remove from the pan and transfer to a cooling rack with parchment paper below (to catch the glaze drippings).

Glaze: In a small bowl, whisk together the melted vegan butter, powdered sugar, lemon juice and vanilla until smooth. Pour over the loaf and allow to set for 20-30 minutes if possible. Slice and serve.
