A light and fluffy vanilla mug cake studded with blueberries. This cake is also low carb and keto-friendly.

Keto Blueberry Mug Cake

unsalted butter (melted)

heavy cream (see note for substitutes)

vanilla

coconut flour

tbsp erythritol sweetener granular

tsp baking powder

blueberries

In a microwave-safe oversized mug, add all ingredients except blueberries.

Mix with a small whisk until batter is evenly mixed. Gently place blueberries on top.

Cook cake in the microwave at full power for about 1 minute and 40 seconds. Allow the cake to cool a few minutes before eating.

This Blueberry Lemon Mug Cake is very easy and quick to prepare, you simply mix all the ingredients in the mug, add fresh or frozen blueberries and lemon zest and you get one unforgettable treat.

1 Minute - Blueberry Lemon Mug Cake

tbsp (20 grams) all-purpose flour

sugar

tsp (1 grams) baking powder

salt

lemon lemon

tbsp (30 milliliters) milk

tbsp (15 milliliters) vegetable oil

tsp (1 grams) vanilla extract

oz (30 grams) blueberries (, fresh or frozen)

In a cappuccino mug (7 fl.oz. (200ml) capacity) add flour, raw sugar, baking powder, lemon zest and salt. Mix to combine.

Add milk, vegetable oil and vanilla extract and mix until combined. Don&rsquo;t overmix.

Add fresh or frozen blueberries and stir them in.

Microwave for 1 minute until a toothpick inserted into the center comes out clean.

Dust with powdered sugar, top with more fresh blueberries if desired and enjoy!
