This Blueberry Baked Oatmeal recipe is the perfect make-ahead breakfast to feed a crowd! The addition of Greek yogurt and almond meal make it high-protein! It’s gluten-free and refined sugar free, and totally customizable!&nbsp;

Healthy Blueberry Baked Oatmeal

oats

almond meal/flour

tsp baking powder

¼ tsp baking soda

sea salt

cinnamon

coconut sugar (or any granulated sugar of your choice)

TBS melted butter (or coconut oil)

milk (regular, almond, coconut etc.)

Vanilla Greek yogurt (or your favorite kind)

eggs

tsp pure vanilla extract

blueberries ((fresh

cinnamon sugar

Preheat oven to 350 degrees F. Grease a 9x13” glass baking dish and set aside.

In a small bowl, combine oats, almond meal, baking powder, baking soda, salt sugar and cinnamon. Set aside.

In a separate, small microwave safe bowl, melt butter (or coconut oil).

In a large bowl, whisk together Greek yogurt, eggs, and vanilla and whisk until combined.

Add melted butter and milk and whisk until combined.

Add dry ingredients to wet ingredients and mix well.

Gently fold the blueberries into the mixture.

Spread evenly in a 9x13” pan.

Sprinkle cinnamon sugar over the top of your oatmeal.

Bake at 350 degrees F for 30-40 minutes (shorter if using fresh berries, longer if using frozen). The oatmeal should be browned on the top and the top should spring back when you gently touch it with your finger.

Let cool for 15 mintues and serve warm. You can also refrigerate after baking and serve cold!

Blueberry Baked Oatmeal

Delicious, warm, and hearty homemade blueberry oatmeal made from scratch, no packets needed! Fresh or frozen berries can be used and it’s vegan / dairy-free if you use plant-based milk and gluten-free if you use gluten-free oats. This recipe is quick and easy to make, plus there are several ways you can customize it.

Blueberry Oatmeal

(125 milliliters) milk (of choice, see note below)

(125 milliliters) water

salt

(50 grams) rolled oats

(76 grams) blueberries ((fresh

maple syrup ((or another sweetener of choice))

Add simmer ingredients to pot.

Add milk, water, and salt to a small pot. Stir everything together. (If you are making the blueberry banana or blueberry cinnamon version, add the cinnamon, here)

Boil.

Place the uncovered pot over medium-high heat until it starts to boil (it will take roughly 3 minutes to boil).

Turn heat down, add oats.

Once the mixture starts to boil, immediately turn the heat down to low, add the oats to the pot, and stir.

Simmer.

Simmer uncovered for 5 minutes. After the 5 minutes have passed, remove the pot from the heat.

Add blueberries and zest, allow to rest. Add maple syrup.

Stir in the blueberries and lemon zest. Let it rest for 2 minutes. After the resting time has passed, pour the oatmeal into a bowl, and add the maple syrup. Extra milk can be added to help cool it and make it creamier.
