Antioxidant-rich blueberries are used as a salad topping and as a base for the dressing in this bright and colorful summer salad!

Antioxidant Salad with Blueberry Tahini Dressing

Dole baby spinach

cucumbers

chickpeas

red cabbage, shredded

blueberries

Tablespoons chopped red onion

avocado, chopped

golden raisins

Tablespoons sunflower seeds

Dole blueberries

lemon juice

olive oil

tahini

sea salt,

water, if needed

Place all ingredients for the dressing into a blender and blend until creamy and smooth. The dressing should be thick, but if the texture is too thick for you add a little water (starting with 1-2 teaspoons).

Prepare two salads by starting with a bed of baby spinach and adding the toppings in the order listed. Drizzle dressing over both salads and enjoy!

This was sooo good!  The dressing is beautiful and delicious - who doesn't love blueberries and tahini!?  So light and refreshing - a perfect summer salad!

This is YUMMY but the dressing needs to be doubled for the 2 servings. With 2 cups of spinach each, we both wished we had more dressing.

The perfect summertime blueberry corn chicken salad with fresh blueberries, grilled corn, shredded chicken, roasted pecans and a maple balsamic dressing. 

Blueberry, Corn and Chicken Salad with Maple Dressing

spring mix or baby greens

oz chicken

corn (fresh, frozen that’s been thawed corn

red onion, diced

avocado oil

pecans

maple syrup

salt

balsamic vinegar

dijon mustard

sea salt and pepper

Roast pecans: Pre-heat oven to 350°. Line a baking sheet with parchment paper. Add pecans to the sheet and toss with maple syrup and sea salt. Bake for about 10 minutes. Remove from oven, toss and allow to cool completely. This step can be done a day in advance.

Prepare dressing: Whisk together olive oil, balsamic vinegar, maple syrup, mustard, salt and pepper in a small bowl. Set aside.

Prep onions: Heat 1 teaspoon oil over medium heat in a medium sauté pan. Add diced onions and cook until translucent and starting to brown, about 7-8 minutes. If you’re using raw or thawed corn, you can add it to the sauté pan with the onion for extra flavor. If you’re using leftover grilled corn, there’s no need to add it.

Prep salads: Grab 3-4 plates and load on salad ingredients starting with a base of greens, shredded chicken, corn, onion, blueberries and maple roasted pecans. Serve with maple balsamic dressing, allowing everyone to add as much or as a little as they&#8217;d like. Store any leftover dressing in the fridge for later.

Love this one! Easy to make as we frequently have all ingredients on hand during the summer. My kids (2 and 6) won't eat the greens, but they enjoy all of the other elements, so it's a great family meal.

This was a really delightful summer salad that even satisfied my husband who isn’t the biggest fan of salads for dinner! This was my first non breakfast/dessert/baked good I have made from EBF and I couldn’t be happier!

Blueberry Walnut Salad with Honey Lemon Vinaigrette

arugula

feta cheese

walnuts

tbsp balsamic vinegar

tbsp honey

salt and pepper

Combine salad ingredients in large bowl.

Prepare dressing by combining all ingredients in a jar with a lid; shake vigorously to combine.

Toss salad with desired amount of dressing (I only used half) and serve immediately.

Peach and Blueberry Summer Salad

baby greens

peaches,

feta

Marcona almonds, chopped

extra virgin olive oil

white balsamic vinegar

sea salt and black pepper,

Place greens in a bowl or on a platter, add peaches, blueberries, feta, and almonds.

Whisk together olive oil and white balsamic. Add a pinch of sea salt and a few turns of black pepper. Dress salad to your liking, toss. Add sea salt and pepper of necessary. Serve.
