These meat-free pasties are relatively quick and easy to make, but are full of flavour with smoked cheese, mustard and spring onions. 

Smoked cheese and onion pasties

250 grams/9 ounces floury potatoes, peeled

milk

cheese,

tsp English mustard

spring onions, finely chopped

x 320 grams/11½oz ready-rolled puff pastry

egg,

salt and black pepper

This recipe makes really soft, melt-in-the- mouth British-style fudge. A batch of super-creamy fudge makes a brilliant present for family and friends at birthdays and Christmas. 

Use the iced water hack and you won't need a sugar thermometer.

tin condensed milk

450 grams/1lb light brown soft sugar

120 grams/4½oz butter, cubed

125 milliliters/4fl oz milk

The Bramley apples in these easy puff pastry pies pair perfectly with marzipan for a sweet tart hand pie.

grams/1½lb Bramley apples, peeled, cored and roughly chopped

caster sugar

grams/1 ounces butter, plus extra for greasing

250 grams/9 ounces natural (uncoloured) marzipan, thinly sliced

tbsp demerara sugar

Bramley apples have an unbeatably tart flavour that works perfectly with the sweetness of the marzipan in this recipe.

Make this ginger cake traybake in advance and you can freeze it before adding the icing - in fact freezing improves the taste.

225 grams/8 ounces margarine, softened

tsp ground mixed spice

75 grams/2½oz icing sugar, sieved

tbsp stem ginger syrup

Is it a roastie? Is it a jacket spud? Is it a big round chip? No – it’s a hasselback potato, crisp on the outside, soft in the centre, looks posh but is easy to make and perfect with steak, chicken or fish.

Each serving provides 233 kcal, 3g protein, 28g carbohydrates (of which 1.5g sugars), 11.5g fat (of which 3g saturates), 3g fibre and 0.7g salt.

Cheese straws are in my top ten all-time favourite recipes and are easy to make. For a little extra spice, sprinkle on some paprika or cayenne.

One of my favourite bakes is a recipe for apple cake I created many years ago. This is a version of the same recipe but made up into individual cakes, which could be served warm as a dinner party dessert or cold as a delicious picnic treat. 

Equipment and preparation: for this recipe you will need six 7cm/2¾in cooking rings.

These delicious toffee apple muffins take no time to make and are perfect for baking with children.

240 milliliters/8½fl oz milk

grams/3½oz butter, melted

300 grams/10½oz plain flour

This delicious, traditional cake is so moreish – when testing this recipe, we couldn’t eat it fast enough! It’s sticky but light in texture, not too dense.

Granny’s gingerbread

tsp bicarbonate of soda

grams/3½oz butter, diced

grams/3½oz black treacle

golden syrup

100 grams/3½oz light muscovado sugar

275 milliliters/9½fl oz full-fat milk

Flapjacks are perfect for taking to work, school or having a snack with a cuppa! You can use any of the dried fruit and nuts you like. This version is slightly more healthy than normal, with a bit less butter and syrup, so it's great for families.

Each serving provides 231 kcal, 4.5g protein, 27g carbohydrates (of which 14g sugars), 11g fat (of which 5g saturates), 3g fibre and 0.25g salt.
