If you love untraditional spreads then you need to whip up this deliciously easy Bourbon Bacon Jam. Sweet, spicy and absolutely delicious.

Bourbon Bacon Jam

bacon (reserve bacon grease)

onions

garlic (minced)

cider vinegar

coffee (brewed)

brown sugar

maple syrup

bourbon

chipotle pepper in adobo sauce (chopped)

Pepper

Preheat oven to 425.

Place cooling racks on a rimmed baking sheet and layer bacon over top.

Cook bacon for 15-20 minutes or until crispy.

Remove from oven and set aside to cool, once cool crumble.

Taking about 1-2 Tbs of the bacon grease add to large pot.

Cook onions in bacon grease until tender.

Add in the garlic and cook for about 1 minute.

Add crumbled bacon and remaining ingredients and heat on medium-low until the liquid has reduced some and thickened about 1-2 hours.

At this point you can add your bacon mix to a food processor to break it down to smaller chunks or you can leave it chunkier.

Place into 2 1/2 pint jars or 4 4 oz jars, seal and refrigerate!

You must try this stuff(even if you add an extra shot of bourbon as finish it it the food processor, like I do.

A sweet and savory bacon jam infused with bourbon maple flavor, topped upon toasted crostini and creamy brie cheese creating the ultimate bacon jam apptizer.

Bourbon Bacon Jam Crostini

lb Applewood Smoked Bacon ((or bacon of choice))

Small Onion (finely diced)

Garlic Cloves (minced)

Dark Brown Sugar

Sherry Vinegar

Bourbon

Maple Syrup

Water

tsp Smoked Paprika

Dijon Mustard

tsp Fresh Thyme (roughly chopped)

tbsp Olive Oil ((plus

Large Baguette

6-8 oz Creamy Brie Cheese

Bake

Preheat the oven to 400 degrees Fahrenheit and line a large rimmed sheet pan with tin foil and top with an oven proof wire baking rack. Lay the bacon strips in an even single layer on top of the wire rack and bake for 15-20 minutes until crispy.

Cool

Remove from the oven and let cool on a paper towel lined plate. The bacon will be golden brown, crispy and will have shrunk in size considerably once done. The bacon will continue to crisp as it cools.

Oven Baking The Bacon

Combine

In a medium bowl combine sherry vinegar, bourbon, maple syrup, brown sugar, dijon mustard, smoked paprika, and water in a small bowl and set aside.

Saute

In a medium sauté pan, add the diced onion and olive oil and sauté on medium heat for about 10 minutes until they are soft and translucent.

Add the minced garlic and let cook for about 30 seconds until fragrant.

Reduce

Add the brown sugar and bourbon mixture, turn heat to medium low and let simmer for about 30 minutes until the mixture has reduced and started to thicken.

Chop

Chop the crispy bacon into 1/2 to 1-inch pieces.

Add bacon pieces and chopped fresh thyme to the bourbon mixture and continue simmering for about 5 more minutes.

Refrigerate

Remove from heat and transfer mixture to a heat proof bowl and let cool at room temperature for 30 minutes, then transfer to the refrigerator for 2 hours (or up to 3 days). The bacon jam will thicken as it cools.

Making the Bacon Jam

Slice

Preheat the oven to broil and place the oven rack on the upper third section (about 8 inches from the broiling unit). Slice the baguette into ½ inch slices and brush with olive oil. Place baguette slices oil side up on a large baking sheet.

Broil

Broil for about 2 minutes until lightly toasted. Remove immediately once toasted as they will go from lightly browned to burnt very fast.

Remove crostini slices from the oven and top with a slice of creamy brie cheese while still warm.

Serve

Next, top with about one tablespoon of the bourbon bacon jam and serve at room temperature.

I cooked this dish for our class lunch, and it was a big hit! It took me 2 hours and 15 minutes to chop, measure, and cook everything. I added a bit of minced garlic at the end to give it a hint of garlic flavor. I also baked it a bit to make the Brie cheese softer, and I served it on water crackers since I couldn't use an oven at work. Everyone really liked it! I totally recommend trying it!

Made it tonight and it was fabulous!  I used a food processor to finely chop the onions.  Then I used it to chop up the bacon.  Worked great and made for a less chunky, more spreadable jam.

Bacon Bourbon Jam

bacon (,

In a medium skillet, cook the cut 3/4 pound bacon, stirring occasionally, until done and on the verge of crispy, approximately 10 minutes. Remove the bacon to a paper towel-lined plate to drain off fat, reserving about 1 tablespoon of the fat in the pan. Discard the rest and reduce to low heat.

Add the minced or pressed 2 garlic cloves and minced 1 large shallot directly to the same skillet with rendered bacon fat. Soften for approximately 4-5 minutes. Stir in the 1/2 cup light brown sugar, 1/4 cup sherry vinegar, 1/4 cup water, 1/4 cup maple syrup, 1/4 cup bourbon  and 1 teaspoon yellow mustard. Simmer on low heat for 10-15 minutes, stirring occasionally, ir until it starts to thicken and liquids are reduced by about 25%. It will not fully thicken until it starts to cool off-heat.

Return the cooked bacon to the pan. Remove from the heat and stir well.

This bacon jam is delectable on everything. Such a great smoky sweet flavor!

enjoyed making this recipe. when I finished I split the jam into two halves and added 2 tbs. orange marmalade and one chopped jalapeno to it.  So glad I did. It's delicious. I highly recommend it. If you like a little heat add one or two chopped jalapenos or any pepper you like. Next time I'm adding ghost peppers!

Just made it for the first time and it is so good! However, if I wanted to counteract a little of the sweetness, what would you suggest?

I made this, I've made a similar recipe in the past but I couldn't find it, so I tried this one.
It wasn't getting thick so I turned it up and it burned. When we decided to pour it into another pan to try and cool it down we noticed a TON of bacon grease. So if you make this, I suggest pouring off most of the bacon fat. I'm so sad.
