Pan-fried tofu is my protein of choice for Korean Bibimbap Bowls. Topped with seasoned vegetables, a dippy fried egg, and flavorful gochujang sauce, you don't have to be a vegetarian to enjoy this recipe!

Prepare the pickled vegetables by combining the daikon, carrot, salt, sugar, vinegar, and warm water in a large glass container with lid. Shake well to dissolve the salt and sugar. Set aside to pickle (at least 10-15 minutes).

Arrange the sliced tofu between two double-layers of paper towels. Gently press the tofu to absorb excess liquid. Use a fresh paper towel to pat the exterior of the tofu dry. Combine the soy sauce and cornstarch in a small bowl and whisk until combined. Heat one tablespoon of vegetable oil in a large non-stick pan over medium heat. Toss half of the tofu pieces in the soy sauce and cornstarch mixture, then immediately transfer to the hot pan and fry for 1-2 minutes per side, or until golden brown. Healthy Buffalo Chicken Bowls

Cook chicken, garlic and hot sauce to slow cooker and cook on low for 6 hours or on high for 3 hours. When chicken is cooked through, shred it and set aside.

Next, drain and rinse your corn and black beans and add them to a bowl. Rinse and half your cherry tomatoes and add them to the bowl as well. Lastly, dice your avocados and add them to the mix!

Assemble your bowls by adding your veggie mixture, topping with chicken, and finishing them off with some healthy yogurt based ranch dressing (or whatever your favorite ranch dressing is).

Loaded with wholesome greens and colorful veggies, this Superfood Salad offers a flavorful, nutrient-rich meal that's quick and easy to make.

Triple Green Superfood Salad with Balsamic Vinaigrette

red leaf lettuce, chopped

arugula

dandelion leaves

grape tomatoes, halved

carrots,

yellow bell pepper

cucumber, thinly sliced

red onion, thinly sliced

feta cheese, crumbled (optional)

croutons (optional, see recipe)

Salt and freshly cracked black pepper,

olive oil

balsamic vinegar

Dijon-style mustard (grainy

Add all the dressing ingredients to your blender or food processor. With variable speed units, start with a low speed and then gradually increase it to a higher speed until the mixture is perfectly smooth.

If you don't have a blender or a food processor, simply add all the ingredients to a medium mixing bowl, a dressing shaker or a mason jar and just whisk or shake until everything's well-mixed.

Mix the Dressing

In a large bowl, gently toss the red leaf lettuce, arugula and dandelion leaves together. Add salt and pepper to taste and continue to toss.

Drizzle on dressing to taste and continue to toss the greens.

Scatter the grape tomato halves, carrot slices, red onion, yellow bell pepper and cucumber over the greens.

Add pepper to taste, drizzle on more dressing (if needed), and gently toss the salad to ensure all the ingredients are evenly coated.

If using, sprinkle feta cheese and homemade croutons over the salad. Drizzle with more dressing if desired.

You can add your favorite protein and make this salad a main course or enjoy it as a meal starter or side dish.***
