There’s a reason this baked feta pasta is going viral overseas! Salty baked feta, sweet cherry tomatoes, fresh garlic, and basil are tossed with al dente pasta to create this easy yet delicious dish!

Baked Feta Pasta with Cherry Tomatoes, Basil & Garlic

lb bowtie pasta

olive oil

boxes cherry tomatoes ((around 20-25 oz))

feta (about 8 oz)

garlic (finely chopped)

red pepper flakes

basil leaves

salt and pepper

Preheat oven to 400. Add olive oil to a baking dish and toss with whole cherry tomatoes, salt and pepper until everything is coated.

Add the feta in the middle and top with a splash more of olive oil plus a few cranks of fresh pepper. Bake for 30 minutes.

Meanwhile, prepare bowtie pasta according to directions then strain.

After the 30 minutes has past, crank the heat up to 450 and bake for another 5-10 minutes or until the feta and tomatoes have browned.

Remove the baking dish from the oven and add garlic and red pepper flakes and stir so the residual heat cooks the garlic and releases the flavors from the red pepper flakes.

Toss in the pasta and stir one more time. Finish with fresh basil, another splash of olive oil and season with salt and pepper.

Roasted tomatoes are just one of the stars in this super flavorful dish. There&#039;s also fresh herbs and a light sauce with savory mushrooms and sun-dried tomatoes. These components come together deliciously in this easy yet pasta dish that&#039;s fancy enough to serve guests. Or, to enjoy with the family at home on even a weeknight - because it&#039;s so easy!

Roasted Tomato Pasta with Mushrooms

pasta

cherry tomatoes (sliced)

Salt (pepper and dried oregano)

mushrooms (finely chopped)

tbsp oil

shallot

tomatoes

tsp kosher salt

tsp pepper

garlic powder

oregano

pasta cooking water

tomato paste

herbs

lemon

Preheat oven to 400 degrees F. Slice tomatoes and add to baking dish. Drizzle 1 tbsp olive oil, toss. Sprinkle generously salt, pepper and dried oregano. Toss. Bake approx 20 min until tomatoes start to release juices.

Meanwhile, boil water for pasta. Salt the water and cook pasta until just al dente. Reserve 1 cup pasta cooking water prior to draining.

In a skillet, add the chopped mushrooms and oil. Cook approx 10 minutes until mushrooms are browned, then add shallots. Cook another 5 min, stir often.

Add sun dried tomatoes, all the seasonings, and tomato paste. Stir, cook another minute. Add pasta cooking water, stir, add pasta and herbs.

Stir well and squeeze in lemon juice, add the roasted tomatoes and serve.
