Veggie sausage rolls are easy to make and ideal for serving at a party or keeping in the fridge for a festive treat. These are packed with savoury cheesy stuffing and cranberries.

Veggie Sausage Rolls

175 grams/6 ounces crustless day-old wholemeal bread, torn into pieces

leeks (150 grams/5½oz trimmed weight), thinly sliced

sage leaves, finely chopped

thyme leaves

free-range eggs, 1 beaten for egg wash

120 grams/4 ounces Parmesan (or alternative vegetarian hard cheese), grated

grams/3½oz manchego (or alternative vegetarian hard cheese), grated

500 grams/1lb 2 ounces pack all-butter puff pastry

tsp plain flour,

grams/1¾oz cranberries

salt and black pepper

A delightful wintry vegan pie with rich mushrooms and sweet shallots that will make your cold nights a lot warmer. Vegan comfort food at its best.

Mushroom and ale pie

250 milliliters/9fl oz just-boiled water

Filled with colourful chunky vegetables and large enough to serve a crowd, this would make a decorative addition to an Easter feast. Roasting the vegetables, and including Gruyère with its distinctive flavour, ensures that it is very moreish too.

For this recipe you will need a 28cm/11in loose-bottomed  fluted tart tin and some baking beans.

Mushroom, chestnut and squash filo pie

Mushroom, squash and goats' cheese pie

For James Martin’s easy quiche Lorraine, choose between making your own proper homemade pastry or a taking the shortcut with a quick shop-bought version.

Each serving provides 698 kcal, 27g protein, 25g carbohydrates (of which 3g sugars), 54g fat (of which 30g saturates), 2g fibre and 2.2g salt.

Quiche Lorraine

175 grams/6 ounces plain flour,

Apples and cheese make perfect partners in this puff pastry tart, ideal for using up the remnants of a cheeseboard or leftover cranberry sauce. Serve hot or cold for a Boxing Day buffet

Brie, apple & onion tart

Heat oven to 200C/180C fan/gas 6. Unroll the pastry sheet onto a large baking tray (leave it on the paper from the pack). If the edges are not straight, trim them with a sharp knife. Score a border, about 1cm in from the edge. Score a criss-cross pattern over the central piece of pastry (this will prevent it from rising too much) and around the border, if you like. Bake for 15 mins.

Meanwhile, heat the oil in a large pan. Add the onions and cook for 10-15 mins until softened and starting to caramelise. Stir in the vinegar, bubble for 1 min more, then add the Dijon mustard and thyme, season well and set aside. Slice the apple thinly through the core so a few slices have a nice star in the middle, and remove any seeds. Toss the slices in a splash of vinegar to prevent them from browning.

The pastry should be puffed and starting to colour. Push down the centre, then spread over the onions. Add blobs of cranberry sauce, then top with the apple slices and brie, overlapping them to cover the tart. Add a few more thyme sprigs, drizzle with a little oil, then put back in the oven for a further 25 mins until the cheese is bubbling and the apple slices are soft. Serve warm or cold.

The deep caramel flavour of the marinade contrasts beautifully with the salty ham. Using a pressure cooker keeps the ham moist and succulent, and finishing it in the oven gives it a lovely shiny glaze. Roasted broccoli makes a simple, nutritious accompaniment.
