Adapted from Nach Waxman's recipe in The New Basics Cookbook.

The brisket, coated with tomato paste and cooked with lots of onions, is exceptionally tender and flavorful, and the recipe is surprisingly easy.

Nach Waxman's Brisket

salt

Preheat oven to 375ºF. Peel the onions and thickly slice them crosswise (not through the root). Put onion slices into a big bowl and separate them into rings. Set aside.

Season the brisket on both sides with salt and pepper. Dust with flour on both sides.

Heat oil in the pot over medium heat. Brown the brisket all over. If the brisket is larger than the pot, you&#8217;ll need to work with it, pushing it around and down into the oil and flipping it over and moving it, until you&#8217;ve got a nice brown color and crusty bits over most of the meat. Transfer the brisket to a platter and add the onions to the pot.

Turn the heat up a bit and cook the onions, stirring often with a wooden spoon and scraping up the browned bits on the bottom of the pot, until the onions are golden brown but not yet caramelized, about 15 minutes.

Turn off the heat. Place the brisket, fat side down, on top of the onions. Using a small butter knife or something similar, coat the the top and sides of the brisket with tomato paste, as if you were frosting a cake. [I sometimes use the whole can if my brisket is very large] Sprinkle with more salt and pepper, to taste.

Tuck the carrot halves and garlic around the outside of the meat. Cover the pot and cook for 1 ½ hours.

Pull the pot out of the oven and turn the oven down to 325ºF. Transfer the brisket to a cutting board. Using a very sharp knife, cut the meat across the grain, into thin slices. (see explanation in post about cutting across the grain) Carefully return the slices to the pot as if you are reassembling the brisket. Place your knife between each slice to make sure some of the liquid gets between all the slices. Slightly tilt the slices to one side to ensure they stay down in the liquid. Cover the pot and return it to the oven for another two hours, until fork tender. Check the pot once or twice during cooking. If it looks dry add 2-3 teaspoons of water.

Brisket is ready to serve or it can be refrigerated for up to three days. Flavors only get better over time.

Put salt and pepper on the brisket pieces and let it sit while you get your other ingredients together.

In a small cup or bowl, mix together all the ingredients for the sauce.

Place sliced onions in the inner liner of your pressure cooker or Instant Pot. Place the sliced beef on top.

Pour over the mixed sauce.

Cook the meat at high pressure for 35 minutes for a brisket with some chew, and at 40-45 minutes for a more tender brisket. If you intend to shred it, you can cook for 60 minutes.

Open the pot and remove the brisket with tongs.

Using an immersion blender, blend together the onions and all the liquid in the pot. Add mustard and ensure it is mixed well.&nbsp;

Turn your Instant Pot to sauté and add the xanthum gum or corn starch and allow the sauce to thicken.

Slice the brisket, and serve with the sauce.

For the Pressure Cooker

You can make this recipe in a slow cooker by following all directions as above, and cooking the brisket on low for 8-9 hours.

Instant Pot Braised Brisket

This Tender Braised Beef Brisket is richly flavorful, succulent, and ultra tender. It can be made ahead of time and tastes even better the next day.

Preheat oven to 350F with rack on lower middle position. Pat dry the brisket and evenly season both sides with the salt and pepper. Set aside.

Heat olive oil in heavy, oven-proof pot until sizzling. Add onions and stir frequently until softened and browned, about 10 minutes. Add garlic and continue stirring 5 more minutes. Turn off heat. Place brisket (fattier side up) on top of onion/garlic mixture. Evenly smear tomato paste over top of brisket. Place carrots and celery all around the edges of brisket. Whisk the flour in the beef broth to dissolve. Pour evenly over brisket. Add bay leaves.

Cover pot tightly with heavy lid. Braise in pre-heated oven for 3 1/2 hours or until brisket is fork-tender. (For ease of slicing, remove brisket halfway during cook time and transfer just the beef onto a cutting board. Slice across the grain into 1/4 inch slices and return to the pot to finish braising.) Add salt and pepper to taste as needed. Serve with freshly chopped parsley for garnish, if desired.

Braised Beef Brisket

lb beef flat brisket ((See Note 1))

tbsp kosher salt

tbsp black pepper

tbsp celery salt

bacon fat

celery (coarsely chopped)

burgundy red wine ((See Note 2))

Season trimmed brisket with kosher salt, ground pepper and celery salt, pressing to adhere on all sides. Wrap tightly in plastic wrap and refrigerate on a baking tray (to catch any drips) 3 hours, or best overnight.

Bring brisket to room temperature. Place a rack in lower third of oven and preheat to 275°F.

On the stove top heat bacon fat on High in a large roasting pan set over 2 burners. Sear brisket on all sides until browned, 7–10 minutes. Transfer to a platter to rest.

Reduce heat to medium and add the vegetables to pan. Cook until browned and just soft, about 15 minutes. Add the wine or juice, bring to a boil, and cook until almost evaporated, 10 minutes. Add the garlic, thyme and bay leaves. Pour broth to come halfway up side of pan, and bring to a boil. Using a spoon or spatula, move vegetables to the sides of the pan and place the seared brisket in center. Cover tightly with foil. Braise in oven until meat is tender, 3 to 3.5 hours. You&#39;re looking for fork tender brisket.

Transfer brisket to a tray, cover with foil and keep warm. Remove and discard the fat from surface of braising liquid (optional). Strain braising liquid into large measuring cup and transfer cooked vegetables to serving bowl. Cover to keep warm. Cook braising liquid over high heat until reduced by half, about 15 minutes (or thicken with 2 tablespoons cornstarch and 1/4 cup water mixed).

Transfer brisket to a cutting board and slice against the grain. Arrange on platter and pour reduced braising liquid over and serve immediately with vegetables.
