Braised Eggplant with Minced Pork - 肉沫茄子

salt

eggplant ((cubed))

pork

Shaoxing wine

white pepper

light soy sauce

sesame oil

cornstarch

dried spaghetti or noodles

oil ((divided))

½ bell pepper ((diced))

ginger ((minced))

garlic ((minced))

red chili ((chopped))

bean sauce

soy sauce

oyster sauce

chicken stock ((or water))

cilantro ((optional))

Dissolve 1 teaspoon of salt into 8 cups of water in a large bowl. Soak the cubed eggplant in the salt water for 15 minutes. After 15 minutes, drain the eggplant, and use your hands or a clean dish towel to squeeze the water out of it. Set aside. This step helps the eggplant cook faster and absorb less oil later on. Win, win!

In a separate bowl, mix the ground pork with 2 teaspoons Shaoxing wine, ¼ teaspoon ground white pepper, 2 teaspoons light soy sauce, ½ teaspoon sesame oil, ½ teaspoon cornstarch, and 2 teaspoons water. Marinate for 15-20 minutes.

Next, cook the spaghetti (or noodles) according to the package instructions. Drain, and set aside.

Meanwhile, heat 1 tablespoon of oil in a clean wok over medium heat, and cook the bell pepper for about a minute. Transfer the peppers to a dish, and set aside.

Next, heat 3 tablespoons of oil in the wok over low heat. Cook the ginger and garlic for about a minute. Add the chili, and cook for another minute. Add the ground bean sauce, and cook for another minute. Then add the pork, and turn up the heat. When the pork is browned, add the eggplant, and stir-fry everything together thoroughly.

Cook for a couple of minutes before adding 1 tablespoon light soy sauce, 1 teaspoon dark soy sauce, 2 tablespoon oyster sauce, and 2 cups chicken stock (or water). Mix everything together well, cover, and simmer for 15 minutes over medium heat, or until the eggplant is tender. At this point in the cooking process, there should be plenty of sauce in the wok. The starch from the spaghetti or noodles will help thicken it.

Lastly, add the bell pepper, cooked noodles, and chopped cilantro to the wok (if using). Mix everything well, add salt to taste, and serve immediately!

Easy Greek-Style Eggplant Recipe

eggplant,

Kosher salt

Extra Virgin Olive Oil

yellow onion, chopped

green bell pepper, stem and innards removed, diced

carrot, chopped

garlic cloves, minced

dry bay leaves

tsp sweet paprika OR smoked paprika

tsp organic ground coriander

dry oregano

cinnamon

tsp organic ground turmeric

tsp black pepper

chickpeas, reserve the canning liquid

Place eggplant cubes in a colander over a large bowl or directly over your sink, and sprinkle with salt. Set aside for 20 minutes or so to allow eggplant to "sweat out" any bitterness. Rinse with water and pat dry.

In a large braiser, heat 1/4 cup extra virgin olive oil over medium-high until shimmering but not smoking. Add onions, peppers, and chopped carrot. Cook for 2-3 minutes, stirring regularly, then add garlic, bay leaf, spices, and a dash of salt. Cook another minute, stirring until fragrant.

Now add eggplant, chopped tomato, chickpeas, and reserved chickpea liquid. Stir to combine.

Bring to a rolling boil for 10 minutes or so. Stir often. Remove from stove top, cover and transfer to oven.

Cook in oven for 45 minutes until eggplant is fully cooked through to very tender. (While eggplant is braising, be sure to check once or twice to see if more liquid is needed. If so, remove from oven briefly and stir in about 1/2 cup of water at a time.)

When eggplant is ready, remove from oven and add a generous drizzle of Private Reserve EVOO, garnish with fresh herbs (parsley or mint). Serve hot or at room temperature with a side of Greek yogurt or even Tzatziki sauce and pita bread.

We love egg plant, love Greek food and with Covid pandemic, we were looking to try some new recipes to cook at home.  Yesterday, I cooked this "Easy Greek Style Eggplant Recipe" for my family.  I was missing the bay leaves and the tumeric, so I did what Suzy said - if you are missing a few spices, continue by adding some additional of the other spices.  I added a bit more  oregano, paprika and cinnamon.  The dish came out delicious!!!! My family of all men (husband and two teenage boys) loved it and gobbled it up.  It was easy to make, delicious and most all very healthy. My husband and I are on Weight Watchers and this is a great dish with minimal points. Thanks, Suzy for a great recipe.

I just made this for the first time and it's amazing. And something I can share with my vegan friends. Or anyone, really. It suits my gluten-free diet, too.

Made this for the first time the other day and filled soft tortilla boats with it topped with a little cheese and some tzatziki sauce ......amazing, thank you so much for sharing this recipe, trying to get the teenagers to eat a little less meat and a little more healthy, my daughter told me this was the best meal we had had in a while, it's tough to please a 17 yr old so that really is a compliment!!

Greek Braised Eggplant Recipe

These tender and juicy Chinese eggplants are cooked in an aromatic sauce infused with garlic, shallots, green onions, and soy sauce. It&#039;s sweet, savory, and tastes fantastic on top of steamed white rice!

Braised Chinese Eggplant

Chinese eggplants (about 8 ounces)

tbsp oil

shallot (minced)

garlic

green onions

water

tbsp sugar

Soak the eggplants. Slice the eggplants into 2.5-inch pieces and slice each piece into quarters lengthwise. Transfer to a bowl and cover with water.

Add ¼ teaspoon of salt and let the eggplants soak for about 15 minutes. Drain the eggplants and rinse them under cold water. Transfer to a plate lined with kitchen paper towels and pat them dry.

Fry the eggplants. Heat ¾ cup of frying oil in a deep saucepan. Once hot, carefully add the eggplants and fry for 1-3 minutes or until tender. Do not over-fry them, or they will lose their vibrant green color.

Line a plate with kitchen paper towels. Remove the eggplants from the oil using a slotted spoon and transfer them to the paper towels to remove the excess oil. Since eggplants tend to absorb a lot of oil, I recommend patting them a bit with another layer of paper towels to remove more oil.

Sauté the aromatics. Heat some oil in a saucepan or clay pot over medium heat. Once hot, add the minced shallot and garlic, and cook for 1-2 minutes. Next, add the green onions and sauté for 1 more minute.

Add the remaining ingredients. Add the fried eggplants, soy sauce, sugar, water, and ground black pepper. Cover the pot with a lid and let simmer for about 10 minutes.
