Make your own cereal with my Homemade Bran Flakes, which pack protein, fiber, no added sugar — and loads of toasty flavor!

Homemade Bran Flakes

(5 ounces 142 grams) whole wheat flour

(3 ounces 85 grams) bran/millers bran

flax

salt

molasses, ((maple syrup

vegetable oil, (or any other flavorless oil

(2 ½ floz/71 milliliters) water

raisins*

fruit*

nuts

Preheat your oven to 300°F (150°C) then butter a 13 x 14 inch flat baking tray. Set aside.&nbsp;

In a large bowl, combine the whole wheat flour, bran flakes, flax, and salt.&nbsp;

In a small jug, combine the water, vegetable oil, and molasses.&nbsp;

Lastly, stream in the wet ingredients, holding some back initially. Mix with the back of your spatula until a sticky dough begins to form. If the mix is too dry add a little more of the wet ingredients until the dough comes together.&nbsp;

On a large flat surface, lay a tea towel underneath your greased baking tray (this will hold it in place while rolling). Transfer the sticky bran mix to the tray and cover with a large sheet of parchment paper.&nbsp;

Using a rolling pin roll the dough out to a very thin even sheet the size of the tray. Once rolled out, remove the parchment paper.&nbsp;

Bake the bran flakes for 45 - 50 minutes until completely dried out and crisp.

Remove from the oven and allow to slightly cool. When you can handle the bran, break it into small bite size flakes.

Cover and store in an airtight container for up to 3-4 weeks.

Homemade Bran Flakes Cereal | Bigger Bolder Baking

All Bran Banana Bread calls for 2 cups Bran Flakes cereal.

Bran Flakes Banana Bread

milk

eggs

vegetable oil

vanilla

brown sugar (150 grams)

all-purpose flour (220 grams)

baking powder

baking soda

mashed banana (from about 2 bananas)

walnuts

Preheat oven to 350 degrees F. Grease and flour an 8 1/2 by 4 1/2 or a 9x5 inch loaf pan.

Put 2 cups of Bran Flakes cereal in a large mixing bowl and crush to make about 1 cup.

Add the 1/3 cup milk, 2 eggs, oil and vanilla and stir by hand or with low speed of a mixer. Add the brown sugar and let stand for 10 minutes.

In a separate bowl, stir together flour, baking powder, soda and salt, and in another bowl mash the banana.

Stir the mashed banana into the bran mixture, then add the flour mixture and stir until well blended. Stir in the walnuts.

Spread evenly in the prepared loaf pan and bake for 50 to 55 minutes.

Bran Flakes Scones

buttermilk

Bran Flakes (Raisin Bran would also work)

all-purpose flour (200 grams)

tbsp baking powder

tsp baking soda

unsalted butter (very cold, (56 grams))

granulated sugar (25 grams)

coconut (optional)

dried fruit and nuts ((can use more if you like))

sugar

Preheat oven to 425 degrees F.  Have ready a baking sheet lined with parchment paper.

Stir together buttermilk and cereal. Let stand for about 5 minutes or until cereal is softened and absorbs most of the milk.

In large bowl, combine flour, sugar, baking powder, baking soda and salt. Add butter to mixture and work it into the flour until crumbly.  You can do this with your fingers, a food processor or a pastry cutter if you prefer.  Once you have a crumbly mixture, add the sugar and stir until evenly mixed.  Also, add coconut if using.

Stir milk/cereal into dry ingredients until mixture comes together. It should be fairly dry.  Empty onto a workspace and gently knead so that all the flour is worked in.  If dough is sticky, add a little more flour (it should not be sticky). Shape dough into a rectangle and sprinkle with add-ins.  Fold dough over on itself in thirds, working in the add-ins.  Repeat, fold.  Shape into circle somewhere around 7 inches.

With a large knife, cut into 8 neat triangles.  Arrange a couple of inches apart on the parchment lined baking sheet, and brush tops with whole milk or a little heavy cream.  Sprinkle with coarse or sparkling sugar.

Bake for 10 minutes at 425, then reduce heat to 375 and bake for another 10 minutes.

peanut butter (or allergy-friendly sub)

Notes: Honey works, but it’s not for strict vegans and will also add a slight honey flavor. Corn syrup will also work, and commenters have said brown rice syrup works as well. If subbing out the molasses, the bars will taste less authentic but still delicious. Almond butter or Sunbutter work, or use peanut butter for the flavor that most closely resembles real Butterfingers.Homemade Butterfingers Recipe: Combine first three ingredients in a small saucepan, and bring to a boil on medium heat. Boil about a minute, stirring constantly, then remove from heat. Add the peanut butter and salt, and stir until it makes a paste. Add the cereal and stir very well to coat, partially crushing the cereal flakes as you stir. Make sure the flakes are very evenly coated. Press into an 8×8 pan—either lined with wax or parchment paper, or greased very well—and freeze until completely hardened. (Cut into bars while only somewhat frozen, or thaw the block a little before cutting.) If you wish to cover in chocolate (they’re good even without it), you can cover them at any time—either pre-cutting or post-cutting. Simply melt the chocolate chips over low heat, stirring constantly until smooth, or mix the coconut oil with the sweetener and cocoa. Then spread over the bars with a spatula and re-freeze to harden. Store in the freezer for optimum “snap.”View Nutrition Facts
