<p>Simmer the milk, butter, onion, cloves, peppercorns, garlic and herbs in a pan for 20 mins. Strain and return the liquid to the pan. Add the breadcrumbs and simmer for 3-4 mins. Stir in the cream or mascarpone. Add nutmeg, season and serve. Can be made up to 3 days in advance and heated up on the hob or microwave on Medium for 3 mins.</p>

Bread sauce is a simple classic British side served on Christmas Day next to turkey slices. This sauce is made with stale bread and milk that is cooked with onion and spice to infuse.

Stud the onion all over with cloves.

 Over low-medium heat, simmer milk with butter, onion with cloves, garlic and bay leaves.

Strain and return liquid into the pan. Add breadcrumbs and stir for a few more minutes. Season with nutmeg and salt and serve.

Classic bread sauce is a British classic perfect with any white meat, but especially Christmas turkey!

Bread sauce is a bit of a British oddity, but it tastes much better than it sounds - and it&#39;s easy to make too! Here&#39;s how to make homemade bread sauce.

Easy homemade bread sauce

garlic, (peeled but left whole)

500 ml (~ 2 cups) milk

g (~ 1 1/2 cups) breadcrumbs (approx. 2 thick slices bread, blitzed)

Add the onion, garlic and bay leaf to a pan with the milk. Place over a fairly low heat, and cook gently for at least 20 minutes, stirring occasionally to prevent a skin from forming.

Use a sieve or a slotted spoon to remove the vegetables and bay from the milk (if using a sieve, don&#39;t forget to put a bowl underneath when you pour it out!).

Return the pan to a low heat, and add the breadcrumbs and butter. Cook for a minute or two until the breadcrumbs have cooked right into the milk, and season generously with salt and pepper. Serve warm. You can make the sauce in advance and reheat in the microwave if necessary.

Elevate bread sauce by adding buttery, crisp onions. It's an ideal condiment for the Christmas dinner table or to serve with your Sunday roast

Crispy onion & bread sauce

milliliters double cream

black onion seeds and crispy onions, to serve (optional)

Heat a dry saucepan until hot and cook the onions for a few minutes, stirring occasionally, until they start to char, then add the butter. Sizzle for 5 mins until the onions are soft and the butter is light brown. Pour in the milk, then add the bay leaf and ground cloves. Season. Bring to the boil, then simmer gently for 5 mins.

Turn off the heat, scoop out the bay and stir in the bread and cream. Tip into a blender or use a hand blender to blitz to a thick sauce. Return to the pan and heat, stirring until bubbling and thick. Can be made two days ahead, cooled, chilled and reheated with a splash more milk. Serve the sauce in a bowl, scattered with the onion seeds and crispy onions, if using.

Go for a stale baguette or sourdough over a sliced white loaf to make this creamy bread sauce. It makes an ideal accompaniment at Christmas or a Sunday lunch

Simmer the milk, butter, onion, cloves, star anise and herbs in a pan for 20 mins. Can be done the day before and left to infuse in the fridge. Strain the mixture and return the liquid to the pan. Place back on the heat and scatter in the breadcrumbs.

Simmer and stir for 3-4 mins until you have a thick sauce. Stir in the clotted cream and nutmeg, season generously and serve. Can be made up to three days ahead; reheat on the hob or in the microwave on medium for three mins.
