Make-Ahead Sausage and Grits Casserole is a very Southern breakfast or brunch entrée full of thick, cheesy grits, and spicy pork sausage. This versatile, hearty, make-ahead grits casserole is then baked to perfection until the cheesy crust is craggy and bubbling, and the filling is silky smooth except for savory bits of sausage.

Make-Ahead Sausage and Grits Casserole Recipe

quick grits (not instant)

water

tsp salt

pork sausage

cheddar cheese (grated)

eggs

milk

thyme

garlic powder

Preheat oven to 350 degrees F.

Place sausage in a large skillet over medium heat. Use a fork or potato masher to break up the sausage into small pieces. Cook the sausage for about 10 minutes or until it is cooked through and just starting to brown. When the sausage is done, remove it from the heat, drain off any fat, and put in on paper towels to drain.

While the sausage is cooking, bring four cups of water to a boil in a medium-size saucepan over medium heat. When the water comes to a boil, add the grits and salt. Reduce the heat to low, cover and simmer for seven minutes. Stir often to prevent lumps. When the grits are done, add the cheese and stir until it is melted.

Add the eggs, milk, thyme and garlic powder to a small bowl and whisk to combine.

Mix the cooked sausage, cheese grits and eggs and milk mixture and pour into a 9x13 inch oven-proof baking dish. (If you are making ahead, at this point cover and refrigerate the casserole for up to 24 hours and then bake as directed.)

When ready to bake, bake the casserole uncovered for 60 minutes. Serve immediately.

This overnight breakfast casserole, made with lox and bagels is perfect for company. Topped with everything you'd put on a bagel, this is a crowd pleaser.

Overnight Breakfast Casserole with Lox and Bagels

everything bagels (about 1 lb)

oz cream cheese

scallions,

c milk

Everything seasoning (Use all below)

4-8 oz lox (Our family likes a lot)

T capers

red onion

tomatoes

butter

t kosher salt

T white sesame seeds

t black poppy seeds

T onions

onion powder

Chop bagels into 1/2&#8243; cubes approximately. Place 1/2 of the bagel cubes into a buttered baking dish.

Cut cream cheese into cubes. Place 1/2 of the cream cheese over bagel chunks.

Sprinkle with 1/2 of the minced scallions. Top with 1/2 of the everything seasoning. Top with rest of bagel chunks.

Sprinkle with remaining cream cheese, and scallions.

Combine eggs, milk and half of the everything seasoning and whisk together well.Pour over bagels and cream cheese. Press bagels into the liquid. If you need more liquid, add more milk. When everything is moistened, cover with plastic wrap placed directly on the surface of the bagels.

When ready to bake, remove dish from fridge and bring to room temperature.

Preheat oven to 350. Uncover the casserole and bake for about 50-60 minutes or until it is puffed and golden brown and set in the center. Let cool on rack for 10 minutes. While it is cooling, scatter the lox, capers, red onions and tomatoes on top.

Preheat oven to 350 degrees F. Spray 9&#215;13 baking dish with nonstick cooking spray. Brown sausage in skillet, drain excess grease.

Spread crescent rolls in bottom of 9&#215;13 dish. Top with sausage, then pour eggs over sausage. Generously top with cheese.

My goodness!! The can of cream of mushroom soup was genius. I whisked it into my eggs and poured it over the sausage. Used croutons as a base and added some more eggs since I had to feed more people. Baked for an extra 10 mins since there were more eggs (40 mins total) and it came out amazing!!!

This was so good!  Made it exactly like the recipe, just added a little bit of milk to the eggs. Came out perfect!!
