c. olive oil

c. maple syrup

tbsp. turbinado sugar (we used Sugar in the Raw)

kosher salt

c. old-fashioned rolled oats

c. unsweetened coconut flakes

c. raw sunflower seeds

c. raw pumpkin seeds

Healthy homemade granola with hints of vanilla and mint and studded with dairy free chocolate chips! This Mint Chocolate Chip Granola has big crunchy clusters, is gluten free and oil free, and is loved by adults and kids alike!

Mint Chocolate Chip Healthy Homemade Granola

old fashioned rolled oats ((gluten free, if desired))

crispy brown rice cereal

cocoa powder

tsp salt

maple syrup

tsp pure vanilla extract

tsp mint extract ((1.5 tsp

Preheat oven to 300 degrees F.

In a large mixing bowl, stir together the oats, brown rice cereal, cocoa powder, and salt.

In a small measuring cup, whisk together the maple syrup, vanilla, and mint extract.

Pour the wet ingredients into the dry and stir really well, scraping the bottom of the bowl, to make sure everything is well moistened.&nbsp;

Pour the granola onto a large rimmed baking sheet into one compact even layer. Pat it down, but don't spread it out too much - you don't want gaps in between.&nbsp;

Bake for 30 minutes. I like to turn my pan around in the oven at the 20 minute mark to ensure even cooking since our oven does have some hot spots. But, DO NOT STIR during the cooking time.*

Let it cool on the pan for about 10 minutes and then break into clumps.

Add the chocolate chips and gently stir to distribute them throughout.

Store any leftovers, completely cooled, in an air-tight glass jar on the counter. It will keep for 3-5 days, although it never lasts that long in our house!

This peanut butter granola is made with just 4 ingredients, in only 10 minutes of prep time. It's crisp and lightly sweetened, with just the right amount of peanut butter flavor. You will want to eat this homemade peanut butter granola by the handful!

4-Ingredient Peanut Butter Granola

(430 grams) old-fashioned oats

honey

peanut butter (natural

vanilla extract

Preheat oven to 275 degrees F.

Place oats in a large bowl. Combine honey and peanut butter in a liquid measuring cup. Heat in the microwave for about 45 seconds, until the peanut butter starts to melt. Whisk peanut butter and honey to blend. Add in vanilla and whisk to incorporate.

Pour the peanut butter mixture over the oats and stir until well combined. Spread granola in an even layer on a rimmed baking sheet (line the baking sheet with parchment paper for easy clean up). Bake for 20 minutes, stir, and then press granola into an even layer on the baking sheet. Bake 10-15 minutes more until granola becomes light golden brown.

Let cool completely on baking sheet. The granola will become crisp as it cools. Store granola in an airtight container for up to two weeks.
