Mediterranean-Style Breakfast Toast 

123 g hummus (homemade

Za'atar spice blend,

arugula

cucumber, sliced into rounds

tbsp/about olives

feta cheese, a sprinkle to your liking

Spread about 2 tbsp hummus on each slice of bread. Add a generous sprinkle of Za'atar spice, then load on the arugula and remaining toppings. Enjoy!

Whipped Lemon Tofu Ricotta Toast

g medium firm tofu

lemon

lemon juice

tbsp extra virgin olive oil

tsp asafoetida (hing)

oregano

turmeric powder (for colour)

yeast

water

Salt and pepper

baby tomatoes

extra virgin olive oil

basil

salt and pepper

pesto

pistachios

capers

Flaky salt

sourdough bread bread

Roasted Herbed Tomatoes: Heat a pan on medium heat and add olive oil. Once heated add tomatoes, basil and oregano and allow to roast until tomatoes are soft ~ 10 mins, mixing occasionally.  May cover pan for the first 5 mins (mixing throughout) to allow the tomatoes to softened quicker. 

Whipped Lemon Tofu: Combine all ingredients in the blenders until completely smooth. 

Assembling toast: Pipe or spread with a spoon the whipped lemon tofu ricotta on toast. Top with tomatoes, capers, pistachios and flaky salt. Enjoy!
