I love anything with lemon in it so when I found out we had to make a drizzle cake lemon was the first thing that came to mind, but I spiced it up a bit to make it special. 

For this recipe you will need a 900g/2lb loaf tin and a food processor.

Pistachio, cardamom and lemon drizzle cake

grams/3½oz shelled pistachios,

milliliters/4fl oz sunflower oil,

grams/4½oz caster sugar

eggs

vanilla bean paste

green cardamom pods, seeds

grams/3½oz plain flour

grams/1 ounces ground almonds, sifted

salt

tsp baking powder

½ tsp bicarbonate of soda

grams/1¾oz soured cream

lemons, juice only

120 grams/4¼oz caster sugar

75 grams/2½oz icing sugar

lemon juice

Nadiya's gorgeous strawberry shortbread cupcakes have a double surprise inside! Cut them open to reveal a whole strawberry and a crisp biscuit base. Perfect for picnics and parties.

small–medium strawberries, tops sliced off

110 grams/4 ounces caster sugar

Cupcakes with a twist

Nadiya's all-American traybake is made with peanut butter and jam. Serve with an extra dollop of jam, some Greek-style yoghurt and fresh raspberries on the side.

You will need a brownie tin about 18x23cm/7x9in.

My version of Welsh cakes is spiced with fennel seeds, has tart dried blueberries, and is served with a fresh blueberry coulis.

225 grams/8 ounces plain flour,

½ tsp baking powder

tsp fennel seeds, crushed

grams/3½oz unsalted butter, cubed,

grams/1¾oz dried blueberries, roughly chopped

A twist on the classic flavours of cherry Bakewell tart, this cake is perfect as a teatime treat. For this recipe, you will need a 20cm/8in round springform tin.

Cherry Bakewell cake

glacé cherries

175 grams/6 ounces plain flour, plus 2 tsp

175 grams/6 ounces unsalted butter,

caster sugar

almond extract

½ unwaxed lemon, finely grated zest only

eggs,

1½ tsp baking powder

100 grams/3½oz ground almonds

grams/1¾oz marzipan, cut into 5mm/¼in dice

unsalted butter, melted

grams/1½oz plain flour

grams/1½oz light brown soft sugar

grams/1½oz almonds

½ lemon, juice only

Yes, you can have cake for breakfast, especially if it’s Nadiya’s coffee cake, topped with a dalgona coffee cream. It’s very simple to make: in fact, it’s almost as quick as making the coffee.

Mary Berry's ultimate apple cake – a Victoria sponge that stays really moist from grated apple. The lemon-flavoured cream keeps it fresh-tasting. 

You will need two 20cm/8in round, loose-bottomed sandwich tins and an electric hand whisk.

150 milliliters/5fl oz double cream

Although I first came up with this recipe because I had someone coming for supper who –genuinely – couldn’t eat wheat or dairy, it is so meltingly good, I now make it all the time for those whose life and diet are not so unfairly constrained, myself included.

A low-FODMAP serving is one small slice. If gluten-free flour is used to replace the ground almonds, this cake is ok for low-FODMAP diets. Make sure to check if your gluten-free flour is low-FODMAP, for example coconut flour is not.
