This recipe takes time, but it’ll be worth the wait for the tenderest sticky beef served in a soft Chinese-style steamed bun.

For this recipe you will need a steamer.

neutral oil (such as groundnut), for frying

250 milliliters/9fl oz light soy sauce

100 grams/3½oz soft light brown sugar

tbsp sesame oil

spring onions

star anise

tbsp dried chilli flakes

tbsp cardamom pods

grams/1¾oz honey

100 milliliters/3½fl oz Shoaxing rice wine

tbsp neutral oil (such as groundnut)

tsp fast action dried yeast

grams/1¾oz plain flour, plus extra for kneading and rolling

grams/4½oz strong white bread flour, pasta flour flour

tsp caster sugar

tsp baking powder

black sesame seeds, to finish

milliliters/4fl oz distilled white vinegar or white wine vinegar

sea salt

tbsp caster sugar

½ tsp crushed pink peppercorns

carrots,

watermelon radishes,

tbsp Chinkiang black rice vinegar or rice vinegar

tbsp light soy sauce

tbsp chilli oil

tsp sesame oil

Now this is a chicken burger we can get behind. Fresh herbs and hot sauce give the ranch dressing for this lighter burger extra punch.


Chicken and bacon burger

The black and blue in these homemade steak burgers comes from blue cheese and the black treacle-caramelised bacon. Served in a seeded brioche bun with red onion, pickles and burger sauce, it has a unique, delicate balance of sweet and salty flavours.

If you don't have a mincer or a food processor powerful enough to finely chop meat, just buy the best quality steak burgers you can.

This recipe is based on the Black and Blue burger served at Dope Burger in Hull. It has been adapted to make it easier to cook in a domestic kitchen and offers substitutes for any elements they wish to keep secret (such as the burger sauce).

200 grams/7 ounces deboned short rib steak, cut into chunks

dill pickles, sliced lengthways
