Homemade hamburger buns are easier to make than you think! This quick brioche bun recipe takes just one hour from start to finish.

Quick Brioche Bun Recipe

water (105-115 degrees F)

milk (105-115 degrees F, whole milk is best)

instant (rapid-rise) yeast

sugar

salt

all purpose flour

½ cups white whole wheat flour

unsalted butter

milk

Line a baking sheet with parchment paper or a silicone baking mat.

Combine the warm water, warm milk, yeast and sugar in the bowl of a stand mixer. Stir gently to combine. Let stand for 5 minutes.

Add the salt and egg to the bowl. Use the paddle attachment to combine on low speed.

Add both flours and mix on low speed until combined, then mix in the butter pieces.

Switch to the dough hook and knead for 8 minutes. The dough will be very soft and slightly sticky.

Transfer the dough to a floured work surface and knead a few times with your hands to form it into a ball. Cut the dough into 8 pieces. Shape each piece into a round ball and place on the prepared baking sheet.

Loosely cover the dough balls with a clean kitchen towel and let rest for 15 minutes.

Meanwhile, preheat oven to 400 degrees F.

Combine the egg and 1 tablespoon milk in a small bowl, stirring with a fork. Remove the towel and brush the tops of the buns with the egg wash. Bake hamburger buns in the oven for 13-15 minutes, until tops are golden.

Brioche Buns

whole milk (237 ml)

sugar (divided 50 grams)

dry active yeast (6.3 grams)

all-purpose flour (585 grams)

tsp salt (11.38 grams)

unsalted butter (113 grams)

Heat up 1 cup of milk to about 110 degrees Fahrenheit (microwave or stovetop) and add 1 tbsp sugar and 2 tsp of dry active yeast. Give it a good stir and let it become frothy in a warm place for about 15 minutes

Meanwhile combine 4 1/2 cup of all-purpose flour, 3 Tbsp sugar, and 2 tsp salt in the bowl of a stand mixer. Then make a well in the center with a spatula.

Pour the yeast mixture and 4 eggs into the flour and beat it slowly with the hook attachment. Then pick up the speed to high.

When no more patches of flour appear add in the sliced 1/2 cup of softened butter.

Continue to beat the dough for another 10 minutes until it’s formed its shape.

Now place it on a lightly floured surface. It will be very sticky. Shape it into a ball and place it into a greased bowl.

Cover The bowl with plastic wrap and keep in a warm place for one hour.

Form the dough into a log and divide it into 8 equal pieces. If you have a kitchen scale, you can weigh each piece of dough to get perfectly equal-sized buns.

Shape each piece into a ball and place it on a baking sheet lined with parchment paper to proof. This should take about 30 to 50 minutes.

Brush each bun with egg wash and sprinkle with sesame seeds. Bake at 350 degrees Fahrenheit for 25-30 minutes or until they are golden brown.
