Season the beef short ribs with salt and pepper.

Heat a large pan over medium-high heat and sear the short ribs until deeply browned on all sides. Remove and set aside.

In the same pan, add the carrots, onion and leeks. Cook until lightly coloured, then stir in the paprika, dried oregano, salt and pepper.

Transfer the beef and vegetables to a pressure cooker. Pour in the beef bone broth, secure the lid and cook under pressure for approximately 2 hours, until the beef is fall-apart tender. Follow the manufacturer's instructions for cooking and releasing pressure safely.

Carefully remove the short ribs from the pressure cooker and set aside. Remove the bones if desired.

Blend the cooking liquid and vegetables until smooth, then strain into a saucepan. Simmer until the gravy reaches your desired consistency. Season with honey, salt and pepper to taste.

To make the Yorkshire pudding batter, blend the plain flour, milk, eggs and a pinch of salt until smooth. Strain the batter and leave it to rest.

Preheat the oven to 220°C (200°C fan). Add a little beef dripping or oil to each section of a muffin tray and heat in the oven until very hot.

Carefully pour the batter into each section, filling it approximately one-third full.

Bake for 20–25 minutes until the Yorkshire puddings have risen and turned golden. Do not open the oven door during baking.

Serve the tender beef short ribs with the crispy Yorkshire puddings and plenty of rich homemade gravy.
