This Cheesy Chicken, Broccoli and Rice Casserole is full of filling chicken, brown rice and broccoli and smothered with a creamy homemade cheese sauce!

Cheesy Chicken, Broccoli and Rice Casserole

light butter (I used Land-O-Lakes)

all-purpose flour

skim milk

salt

black pepper

oz 50% reduced fat sharp cheddar cheese (shredded (I used Cabot))

oz sharp cheddar cheese

brown rice

chicken

broccoli florets

bread crumbs

Pre-heat the oven to 350. Lightly mist a 9x13 baking dish with cooking spray and set aside.

Melt the light butter in a medium saucepan over medium-low heat. Add the flour to the butter one tablespoon at a time and stir to combine. Add the milk a little at a time and whisk the flour mixture into the milk until smooth. Add the salt and pepper and stir to combine. Turn the heat up to medium and add the cheddar cheese to the milk mixture. Whisk together for 5-6 minutes until smooth and thick.

Combine the rice, chicken and broccoli florets in the prepared baking dish. Pour the cheese sauce over the top and stir the mixture together until well combined. Spread evenly across the casserole dish.

Place the bread crumbs in a dry skillet over medium heat and brown bread crumbs for a few minutes, stirring frequently until golden. Sprinkle the toasted bread crumbs over top of the casserole and bake in the oven for 30-35 minutes until hot and bubbly.

Add butter, diced onion, diced broccoli, carrots, chicken...

Add butter, diced onion, diced broccoli, carrots, chicken broth, pepper, salt, and crushed red pepper flakes to pressure cooker. Secure lid in place and turn valve to "sealing."

Select "High Pressure" or manual and cook for...

Select "High Pressure" or manual and cook for 4 minutes. When cook time ends, turn off pressure cooker and use a quick release.

In a small bowl, whisk together cold water...

In a small bowl, whisk together cold water and cornstarch. Turn pressure cooker on to "saute" and add cornstarch mixture. Also add heavy whipping cream and cheddar cheese.

Cook for about 3-4 minutes while stirring constantly...

Cook for about 3-4 minutes while stirring constantly until soup thickens and cheese melts completely. Serve immediately. ENJOY.

Instant Pot Broccoli Cheddar Soup

This One Skillet Cheesy Chicken &amp; Broccoli Orzo is the absolute perfect weeknight meal. It's ready in just about 30 minutes, made in one skillet, and perfect for the whole family (toddlers included!)

One Skillet Cheesy Chicken Broccoli Orzo

olive oil

T butter

shallot, minced (about 1/2 cup)

garlic,

dry orzo pasta

broccoli florets, chopped (about 3-4 cups)

chicken broth, more if needed

milk (I used whole milk)

cheddar cheese

T chopped parsley, for serving, optional

Heat oil in a large skillet over medium heat. When oil is hot, add shallots and cook until fragrant, about 3-4 minutes. Add the butter, garlic, and orzo, and cook until orzo is slightly golden and toasted; being careful not to burn it; 1-2 minutes. Add broccoli to skillet and cook an additional minute or two.

Pour in broth and 1/2 c milk, and season with salt and pepper.  Bring to a rolling boil, then reduce heat, cover and simmer for 10-12 minutes, stirring every few minutes, until orzo is cooked/al dente and liquid has reduced. You may need to an additional 1/2 cup of chicken broth. 

Add in shredded chicken and remaining 1/2 c milk; stir and simmer another 2-3 minutes. (You want the consistency to be creamy, not soupy! Simmer for a few extra minutes if you need liquid to reduce down) 

Stir in cheddar cheese and adjust salt and pepper at this time.

Garnish with fresh parsley and serve! ENJOY!!!

Simple Broccoli Casserole. This is a kid-friendly veggie dish using fresh broccoli, cheese, a little seasoning with a buttery, cracker topping. Oh, and no condensed soup! I use sour cream in this yummy casserole.

Sour Cream

Shredded Cheddar Cheese (more or less to taste)

Garlic 'n Herb Seasoning

Salt

Ritz Crackers (one sleeve, crushed)

Tablespoons Butter (or margarine)

Preheat the oven to 350-degrees.

Chop the broccoli into bite-size pieces. Cook the broccoli in the microwave with a small amount of water for 3 - 5 minutes. Cook until just tender, not mushy. Drain.

In a large bowl combine sour cream, half of cheese, garlic &#039;n herb seasoning, and salt and pepper. Stir well to combine. Add drained broccoli and stir. Put broccoli into a casserole dish that has been spray with non-stick spray.

Sprinkle the remaining cheese over the top of the broccoli.

Crush one sleeve of Ritz Crackers. Sprinkle the crackers on top of the broccoli mixture. Put small dabs of butter all over crackers.

Bake at 350 degrees until golden brown, about 25-35 minutes.

Hey!! Just wanted to say I tried this and it was great!! Had to add a little plain yogurt and half and half to the sour cream, and then used dried onion and mustard for spices because of course I didn’t have the right version/enough of anything and it was still great—thank you very much for posting!!! That’s how you know a recipe is good—when you do it all wrong and it’s still delicious.

Excellent recipe, and so simple. I did use Birdseye Broccoli Florets. After letting the broccoli sit at room temperature for a while, I trimmed the stems &amp; microwaved the frozen broccoli just a bit. Made this recipe for Thanksgiving and will be making it again for Christmas dinner.
