Broccoli Casserole For One

salted butter (, divided)

onions

garlic (, minced)

heavy cream

Monterey Jack cheese

breadcrumbs

Preheat the oven to 375°F (190°C).

Place the broccoli florets in a medium-sized pot of boiling water and cook for 2 minutes or just until tender-crisp. Drain well and set aside.

Melt 1 tablespoon of butter in a 10-inch skillet over medium heat. Add the onions and cook until translucent, about 2 minutes.

Add the garlic and cook, stirring frequently for 30 seconds.

Pour in the chicken broth, increase the heat to medium-high, stir, and bring to a simmer.

Add the heavy cream and bring the mixture back up to a simmer, stirring frequently. Continue to simmer and stir for an additional 2 to 3 minutes to thicken the sauce slightly.

Remove the pan from the heat and stir in the sour cream. Next, stir in the Monterey Jack cheese and gently fold in the broccoli.

Transfer the broccoli and sauce to a lightly buttered 5x5 inch baking dish and place the dish on a rimmed baking sheet to catch any possible spills.

Melt the remaining ½ tablespoon of butter and pour into a medium-sized bowl. Stir in the breadcrumbs and shredded Cheddar cheese.

Sprinkle the breadcrumb topping evenly over the casserole and bake uncovered for 20 to 25 minutes or until the casserole is bubbly and the topping is golden.

Remove the casserole from the oven and let it rest for 5 to 10 minutes. As the casserole rests, the sauce thickens even more.

Very delicious and EASY to make. It’s better than the original broccoli rice casserole that has way more calories, and it is so healthy with the addition of the rice. And, it’s a one-dish dinner! I’ll be warming it up all week for lunch.

This was delish! I love your recipes! They are inspiring me to cook again!

This Broccoli Cheese Casserole is the cozy side dish I can't stop making—ultra creamy (hi, cottage cheese), super easy, and made with frozen broccoli for zero fuss. No heavy mayo or canned, just perfectly tender veg and cheesy goodness topped with crispy golden panko. Delish enough to serve guests and simple enough to make any weeknight!

Healthier Broccoli Cheese Casserole (with cottage cheese!)

cottage cheese (low fat

sharp cheddar or Colby Jack cheese

Dijon mustard

tbsp chopped fresh parsley*

tsp kosher salt

tsp black pepper

panko bread crumbs

tbsp extra virgin olive oil butter

Preheat oven to 400F. Spray an 8x8 inch or 2 qt baking dish with olive oil cooking spray.

Steam broccoli. I do this by placing frozen broccoli into a large glass bowl. Add 2 tbsp water and cover with a large plate. Microwave for 5 minutes. (You can also steam on the stovetop until crisp-tender.) Drain broccoli well and set aside.

In a large mixing bowl, add cottage cheese, shredded cheese, parmesan, egg, parsley, salt, and pepper. Stir well to combine. Break any large broccoli florets into smaller pieces then add to the bowl. Stir until well combined. Pour into casserole dish and use a rubber spatula to smooth it out.

To a small bowl, mix together breadcrumbs and olive oil/melted butter. Sprinkle mixture over casserole.

Bake for 30 minutes, or until top is golden and casserole is bubbly!

This comforting Chicken Noodle Casserole features tender rotini pasta, healthy broccoli florets, and shredded cooked chicken breast all enveloped in a creamy homemade cheese sauce. Topped with melted cheddar cheese and baked to bubbly perfection, it's an easy and satisfying meal perfect for family dinners.

Easy Chicken Noodle Casserole Recipe

onion

rotini pasta

unsalted butter

cheddar cheese (8 ounces, divided)

chicken breast

Italian seasoning

pepper

Preheat Oven

Preheat your oven to 375° F to prepare for baking the casserole later.

Cook Pasta and Broccoli

Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package directions until al dente, adding the chopped broccoli during the last 2 minutes of cooking. Drain and rinse under cold water to stop the cooking process.

Sauté Onions

Melt the butter in a large skillet over medium heat. Add the chopped onion and cook, stirring occasionally, until softened, about 4-5 minutes.

Make Sauce

Sprinkle the flour into the skillet and whisk continuously for 30 seconds to eliminate raw flour taste. Slowly whisk in the chicken broth and whole milk, then add Italian seasoning, garlic powder, salt, and pepper. Continue cooking and whisking for 3-5 minutes until the sauce thickens.

Combine Ingredients

Remove the sauce from heat and stir in the chopped cooked chicken, cooked pasta, broccoli, and half of the shredded cheddar cheese. Mix thoroughly to combine all ingredients evenly.

Assemble Casserole

Transfer the mixture into a 13×9-inch baking dish and spread it into an even layer. Top evenly with the remaining shredded cheddar cheese.

Bake

Cover the casserole with foil and bake for 15 minutes. Remove the foil and bake uncovered for an additional 5 minutes until the casserole is hot, bubbly, and the cheese is melted and slightly golden.

Casseroles can go wrong fast when the rice tastes flat, the sauce turns pasty, or the chicken dries out before the cheese melts. I’m Lila, and my first version of this cheesy chicken and broccoli casserole had all three problems. After testing the sauce thickness, seasoning the chicken before cooking, and layering the cheese instead of dumping it all on top, I discovered how to keep every bite creamy without making the rice heavy. This cheesy chicken broccoli rice casserole feels like the kind of dinner I want on a cold night: warm, savory, bubbling, and comforting, with the familiar flavor of chicken broccoli rice casserole.
