A simple pasta salad with fresh crisp broccoli, bacon and onion in a creamy  homemade dressing!

Broccoli Pasta Salad

broccoli

rotini pasta (or short pasta)

onion

cranberries

sunflower seeds

bacon (cooked and crumbled)

feta cheese (optional)

sugar

white wine vinegar

mayonnaise

sour cream

salt & pepper

Whisk dressing ingredients in a small bowl. Set aside.

Cook pasta according to package directions.  Drain and run under cold water.

Add remaining ingredients to a larger bowl.

Pour the prepared dressing over and mix well.

Refrigerate for one hour before serving.

This Broccoli Pasta Salad is loaded with broccoli and other veggies the tossed creamy parmesan dressing! The perfect flavor and side dish for your summer gatherings.

Parmigiano-Reggiano cheese

white vinegar

black pepper

rotini pasta

bacon small dice (cooked crispy)

bite-sized cut broccoli florets

red bell pepper

red onion

peas

In a large bowl, add all of the ingredients and whisk to combine, set aside.

For the dressing:

Cook the pasta per directions on the back of the box, do not overcook. Drain and rinse with cold water. Let drain as you assemble the rest of the salad, so a lot of the water drips off.

In the bowl with the dressing, add the cooked bacon, broccoli, bell pepper, onion, and frozen peas.

Stir to combine with the dressing. Add in the pasta and fold in to combine. Cover with plastic wrap and let chill for at least an hour in the fridge or until cold.
