Chicken breast stuffed with a cheesy broccoli mixture, seared then baked to perfection.

Cheesy Broccoli Stuffed Chicken Breast

chicken breasts (or 4 large breasts)

Salt and pepper,

Tbsp Olive Oil

Tsp Garlic Powder (divided)

Paprika

Tbsp Italian Seasoning

broccoli florets

Cup Shredded Cheddar Cheese

¼ Cup Cream Cheese

Preheat your oven to 375F. 

Place the chicken on a chopping board and using a sharp knife, slice through the middle to create a pocket for the stuffing.

Repeat with all the chicken breasts, then season with salt, pepper, paprika and Italian seasoning on all sides.

In a mixing bowl, combine broccoli with shredded cheese and cream cheese. season with a pinch of salt and pepper. Spoon the mixture into the chicken breasts, and secure the pocket using toothpicks.

Heat oil in a large, ovenproof skillet over medium-high heat. Add the chicken and sear for 2-3 minutes on each side, then transfer to the oven and bake for additional 15-17 minutes.

A meat thermometer inserted in the middle of the chicken should read 165F. Enjoy!

Broccoli and Cheese Stuffed Chicken Breast Recipe

salt

black pepper

onion powder

garlic powder

¼ teaspoon ground paprika

olive oil (divided)

boneless, skinless chicken breasts

broccoli (smaller pieces)

cheddar cheese

cream cheese (room temperature (¾ brick))

garlic (minced)

salt and black pepper (to taste)

Preheat

Coat

Combine salt, pepper, onion powder, garlic powder, and paprika in a small dish. Drizzle the olive oil over the chicken breasts. Rub the seasoning mixture on the chicken and coat evenly.

Combine

Combine all filling ingredients in a bowl. Set aside.

Cut out a wide pocket in each chicken breast, being careful not to cut all the way through.

Stuff

Stuff each chicken breast with the filling.

Brown

Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Once heated, sear the stuffed chicken breasts on each side, but don’t cook through. You may need to do this in two batches depending on the size of your chicken breasts. Place all 4 breasts in the skillet and transfer the skillet to the oven.

Bake

Bake for 25-35 minutes until the chicken breasts are cooked through.

This recipe came out exactly how it was supposed to. I have tried it before with spinach and I must say I prefer the broccoli. This was delicious, I did not pan sear it. I put it on broil for 2 to 3 minutes when it was closer to being done and it came out moist and full of flavor. Thanks for the simple recipe!

super dry, which makes sense and really not good.  broccoli not cooked through either.  I tried two breast in air fryer, two in oven and the oven ones were better.
