Brussels Sprouts Carbonara – This dish combines a few of my favorite things, caramelized shredded brussels sprouts, pasta and pancetta in a delicious, creamy sauce that takes about 15 minutes to make.

Brussels Sprouts Carbonara

eggs

parmesan cheese

basil (chopped)

tsp crushed red pepper flakes (optional)

oz Delallo fusilli

oz pancetta

garlic

shallots

brussels sprouts (shredded)

kosher salt

black pepper (to taste)

Whisk eggs, 1/2 cup of the cheese, basil and crushed red pepper if using; set aside.

Bring a large pot of salted water to a boil for the pasta.

In a large deep nonstick skillet, saute pancetta and shallots about 3 minutes, add the garlic and saute another minute.

Add the shredded brussels sprouts, and black pepper and saute another 8 -10 minutes, until slightly caramelized. Remove from heat.

Meanwhile cook pasta al dente according to package directions.

Reserve 1 cup of the pasta water just before draining, then drain and add to the skillet and mix well with brussels sprouts.

Slowly, a tablespoon at a time, add 1/4 cup of the water to the egg mixture and mix well, slowly add to pasta stirring well, add additional reserved pasta water 1/4 cup at a time as needed, stirring and finish with the remaining 1/4 cup cheese. Serve right away.

Brussels Sprouts Carbonara Recipe

This creamy Brussels Sprouts Pasta Carbonara is made with bacon and shredded Brussels sprouts. It only takes 15 minutes of prep work and makes a satisfying weeknight dinner!

Brussels Sprouts Pasta Carbonara

coarse kosher salt

dry spaghetti, linguine

Brussels sprouts, trimmed

Parmesan cheese

center-cut bacon, chopped (look for Certified Humane)

Bring one gallon of water to a boil in a large pot over high heat. Once water comes to a boil, add salt and cook pasta according to package instructions to al dente.

Meanwhile, thinly slice the Brussels sprouts. You should have about 3 to 4 cups.

Stir egg and yolks together in a small bowl. Once fully mixed, whisk in the cheese. Set aside.

Set a medium heavy skillet over medium-high heat and cook bacon, stirring often, until browned and crispy, about 5 minutes. Adjust heat as needed to prevent burning. Use a slotted spoon to transfer cooked bacon to a plate covered with clean paper towels.

Add Brussels sprouts to the skillet and sauté in the bacon fat until crisp tender, scraping the bottom to release any browned bits (fond) stuck to the bottom, 3 to 4 minutes. Remove the skillet from heat and set aside.

When the pasta is done, carefully remove 1 cup of pasta water. Drain pasta and return it to the pot. Off the heat, gradually stir in egg-cheese mixture, stirring constantly with tongs to cook eggs and coat noodles. Add pasta water as needed to thin.

Stir in the Brussels sprouts, bacon and pepper. Serve hot.

I love quick an easy recipes like this. The addition of bacon was delicious!

I grew up eating pasta carbonara, but I forgot how much I like that egg mixed in with the pasta and pork. Thanks for updating an old favorite. The Parm and Brussels are so perfect and yummy too with the pasta.

This looks AMAZING, I haven't made a carbonara in years and you have just inspired me to do so this weekend! Drooling!

Simple delicious nutritious flavorful. No cream so end results is not heavy and fattening 

Meal comes together quickly, and I like the added vegetable to the dish.  My son thought the flavor needed a little more depth, so I'll try adding some shallot or garlic next time.  I will say, when I added the salt to the boiling water, I had a huge reaction.  Maybe I added it too quickly, but the water boiled over everywhere.  I will stick to adding the salt before the water boils.  

With only a few ingredients and in a short amount of time I had a beautiful Monday night dinner. It was easy to prepare, although I did add some chopped scallion and garlic to grease before throwing in the brussels sprouts.  Another hit in my family. Your prep instructions are always helpful. I also love the recipes that are for 4 servings.
