Keto Peanut Butter Brownies make your mouth water! These fudge low carb brownies are topped with a rich sugar free peanut butter fudge and a sweet chocolate glaze. Heavenly!

Keto Peanut Butter Brownies Recipe

recipe Ultimate Keto Brownies ((omit the added chocolate chips))

peanut butter

tbsp butter

vanilla

tsp salt

Swerve Confectioners (or other powdered sweetener)

heavy whipping cream

chocolate chips

Line a 9x9 inch metal baking pan with parchment, with an overhang for easy removal. Prepare the keto brownie batter as directed (skipping the added chocolate chips) and pour into the pan. Bake the brownies for 15 to 18 minutes and let cool in the pan. 

Brownie Base

In a medium microwave safe bowl, combine the peanut butter and butter. Melt on high until they can be stirred together. Alternatively, you can do this in a pan on the stovetop over low heat.

Stir in the vanilla and the salt, then stir in the powdered sweetener, whisking vigorously to combine. Spread over the cooled brownies and refrigerate until set, about 1 hour.

Peanut Butter Fudge

In a small saucepan over medium low heat, bring the cream to just a simmer. Remove from heat and add the chocolate chips. Let sit 5 minutes to melt, then whisk until smooth.

Pour the chocolate topping over the peanut butter and use an offset spatula to spread to the edges.

Return to the fridge for another 30 minutes or so to set the chocolate. Lift the brownies out by the edges of the parchment and cut into squares.

My only problems is that they often separate; the peanut butter layer comes off of the brownie layer… any ideas? Should I score the brownie layer first?

Buckeye Turtle Brownies (Seriously GOOD)

9X13

bag of caramels (unwrapped)

milk

pecans

butter (softened)

sugar

½ teaspoon oil (any preferred)

fleur de sel or coarse sea salt, (optional)

Bake your 9X13 brownie mix or recipe according to directions. If you are using my favorite homemade gluten-free brownie recipe, do not mix in the last cup of chocolate chips before baking. Cool brownies completely.

In a microwave safe bowl place caramels and milk and heat on high for about 1 1/2 - 2 minutes**, stopping to stir intermittently. Remove immediately just after caramels are almost smooth. Pour in chopped pecans, mix, and scoop in spoonfuls over brownies immediately. TIP: Use a piece of waxed paper greased with cooking spray to press down and spread. Don&#039;t worry if it doesn&#039;t cover brownies completely, you&#039;ll be covering it with other layers. 

For the peanut butter topping*, beat all ingredients together in a medium bowl until well mixed (will be very thick). Scoop spoonfuls of peanut butter topping all over turtle topping. Press and spread the peanut butter topping gently using fingers.

In another microwave safe bowl place chocolate chips and vegetable oil. Melt on high for about 1 minute**, stirring occasionally until chocolate is about melted and smooth. Pour over peanut butter layer and smooth with offset spatula. Sprinkle with coarse sea salt or fleur de sel, if desired.

These are great!  Nothing wimpy about them at all.  For the peanut butter frosting, just add more milk to make it creamy and easy to spread over the turtle mixture.  Thank you for the recipe!
