This no-bake peanut butter buckeyes recipe is the perfect bite-sized treat with our favorite peanut butter and chocolate combination! These easy buckeye balls make an amazing dessert for Thanksgiving and the holidays, are just the right amount of sweet, and are also gluten-free and vegan! Make a batch or two and keep them handy so you'll always have something fun to snack on!

Peanut Butter Buckeye Balls (Gluten-Free, Vegan)

peanut butter

coconut oil

sugar

coconut flour

vegan dark chocolate chips

Prepare Peanut Butter Dough

In a medium mixing bowl, combine the peanut butter, melted coconut oil, powdered sugar, and coconut flour. Mix very well until you get a homogeneous dough.

Chill the Dough

Let the dough chill it the refrigerator for at least 30 minutes until it is relatively hardened and easy to shape and mold.

Shape the Peanut Butter Balls

Scoop 1 heaping teaspoon of dough and roll it into a ball with the palms of your hands. Place the balls on a parchment-lined plate and chill in the freezer for at least 30 minutes until hardened. 

Prepare Chocolate Coating

In a small deep bowl, combine the chocolate chips and coconut oil and heat in the microwave for 30-seconds intervals, mixing well after each interval until you get a smooth and glossy mixture (it took me 2 intervals in total &#8211; 60 seconds) to get the chocolate to melt and become smooth.

Dip the Peanut Butter Balls in Chocolate

Use a toothpick to poke each peanut butter ball and dip it in the chocolate mixture, rotating the ball to cover most of it, leaving a small circle uncoated at the top. Place the coated buckeye balls on a parchment-lined plate and let them chill in the freezer for at least 15 minutes, and then use your finger to spread out the dough at the top to cover up the hole made from the toothpick before serving or eating.

The buckeyes are a classic treat that just screams home cooking. They have a delicious and unique flavor, which is slightly nutty and sweet at the same time. Plus, there is something about rolling the dough into little balls and then coating them with chocolate that makes me feel like I&#39;m back in my childhood kitchen.

Buckeyes

butter (softened)

vanilla extract

confectioners’ sugar (sifted)

Line a baking sheet with waxed paper; set aside.

In a medium bowl, mix peanut butter, butter, vanilla, and confectioners’ sugar with hands to form a smooth stiff dough.

Shape into balls using 2 teaspoons of dough for each ball and insert a wooden toothpick into the ball. Place on prepared pan, and refrigerate for at least 1 hour.

Melt shortening and chocolate together in a metal bowl over a pan of lightly simmering water. Stir occasionally until smooth, and remove from heat.

Remove peanut butter balls from the refrigerator. Dip into melted chocolate leaving a small uncovered area so balls resemble buckeyes. Return to wax paper, chocolate side down, and remove toothpick. Repeat with remaining balls. Refrigerate for 30 minutes to set. Use fingers to blend in toothpick holes.

Buckeyes are the perfect no bake candy to make for the holidays! With a creamy peanut butter center and a sweet chocolate exterior, this easy buckeye recipe is a crowd favorite! Bonus - only a handful of ingredients are needed!

unsalted butter (room temperature)

½ cups creamy peanut butter peanut

salt

milk chocolate melting wafers (I used Ghirardelli)

Line a sheet pan with parchment paper. Set aside.

Cream butter and peanut butter together until smooth and completely combined, about 2 minutes.

Beat in the vanilla extract and salt.

Add 1 1/2 cups powdered sugar and mix on low speed until mostly combined and then increase the speed to high for one minute. Repeat twice more with 1 cup of powdered sugar each time. The mixture should be smooth, a little bit crumbly and should not stick to your fingers when you pick it up.

Scoop mixture, roll into 1 inch balls and place on prepared baking sheet.

Freeze balls for 30 minutes or until very firm. You can also refrigerate for 2 hours if freezer space is unavailable.

When peanut butter balls are just about ready, prepare the chocolate coating.

Combine chocolate melting wafers and chocolate chips in a shallow, microwave safe bowl and melt in the microwave in 30 second increments, at 50% power, stirring in between, until chocolate is fully melted and smooth. Be careful not to overheat the chocolate mixture.

Using toothpicks or wooden skewers, carefully dip the peanut butter balls into the melted chocolate leaving the top of the ball free of chocolate.

Wipe off excess chocolate on the side of the bowl and return the peanut butter balls to the parchment lined baking sheet.

Carefully twist the toothpick or skewer to remove. Smooth over the hole with additional peanut butter mixture or a slightly wet finger, or leave as is.

Repeat with remaining peanut butter balls until all balls have been dipped.

Let buckeyes sit until the chocolate has set up. Refrigerate buckeyes until ready to enjoy.

Buckeyes (Buckeye Recipe)

These buckeyes have the perfect balance of salty and sweet! They&#x27;re made with soft peanut butter centers that are dipped in chocolate.

peanut butter (250 grams)

Tbsp unsalted butter, room temperature (85 grams)

tsp fine salt (3 grams)

sugar (280 grams)

milk chocolate chips (175 grams)

Tbsp vegetable shortening or coconut oil (12 grams)

dark chocolate chips (85 grams)

Sprinkles

Electric Hand Mixer or Stand Mixer

Tray

Parchment Paper

Piping Bag

Cream together 1 cup of peanut butter, 6 Tbsp of butter, 1 tsp vanilla, and 1/2 tsp fine salt in a large bowl with a hand mixer or stand mixer fitted with a whisk attachment until smooth and combined.

Add in 2 1/4 cups powdered sugar and mix on low until combined. The dough should be thick. Scrape the sides and bottom of the bowl as needed with a rubber spatula.

Scoop out 1 Tbsp-sized pieces and roll them into balls. If you want to be super precise, each ball should weigh about 24g on a scale.

Place the balls on a parchment-lined baking sheet and chill in the fridge for 30 minutes or until they&#x27;re firm to the touch.

Once the peanut butter balls are firm to the touch, make the chocolate coating. Add 1 cup of milk chocolate chips and 1 Tbsp shortening or coconut oil to a small bowl and melt in 20-second intervals in the microwave. Stir between intervals until the chocolate is melted and the mixture is smooth and combined.

Remove the peanut butter balls from the fridge and use a scribe or toothpick to dip each peanut butter ball in the chocolate mixture. I like to gently swirl the peanut butter balls around in the mixture to cover them about 2/3 of the way up in chocolate. Gently scrape the bottom of the balls on the edge of the bowl to remove any excess chocolate, then place them back on the baking sheet. If you notice the peanut butter balls begin to soften as you&#x27;re trying to dip them, pop them back in the fridge or freezer for 5-10 minutes to let them firm up again. This will make them a lot easier to dip!

Gently press a butter knife or offset spatula over the top of the balls to cover up the holes on top, then place them back in the fridge to chill and let the chocolate firm up.

If you want to add a little extra pizzaz, I love to place 1/2 cup of dark chocolate chips in a small piping bag, melt the chocolate in the microwave, snip a small hole in the bottom of the bag, and drizzle the melted chocolate over the top of the buckeyes. Then I add a garnish of some colorful sprinkles over the dark chocolate (in this case I used Christmas sprinkles because these were for a holiday party, but rainbow nonpareils would be so cute too!).
