Quick and easy Japanese noodle recipe! Oroshi Soba is a refreshing chilled noodle dish served in a savory sauce and topped with grated daikon.

Oroshi Soba

oz dried soba noodles (buckwheat noodles)

oz daikon radish ((2', 5 cm))

green onion/scallion ((for topping))

katsuobushi (dried bonito flakes) ((for topping; skip for vegan/vegetarian))

Tbsp tenkasu/agedama (tempura scraps) ((for optional topping))

Tbsp nori seaweed (kizami nori) ((for topping))

water

katsuobushi (dried bonito flakes) ((skip for vegan/vegetarian))

mirin

soy sauce

Gather all the ingredients.

In a medium saucepan, add water and bring it to near boiling point.

Add the katsuobushi (dried bonito flakes) and let it simmer for 15 seconds, and then turn off the heat. Set aside and let the katsuobushi steep for 15 minutes.

Meanwhile, peel daikon skin, grate it (I use this grater), and set aside.

Cut the green onion into fine rounds.

After 15 minutes of steeping, strain the katsuo dashi into a measuring cup. You should have 1 ¼ cup. If you don’t have it enough, add water.

Add mirin, sugar, and soy sauce. Bring it to boil on medium heat and turn off the heat.

Mix well and taste it. If necessary, season with kosher salt.

Place the pot in iced water to cool the sauce down before transferring to the refrigerator (if you are planning to serve later on).

Bring a large pot of water to a boil. Do not use small pot when cooking noodles. For cooking soba noodles, we do not salt the water. Also, remove the paper bands on bundles of soba noodles first. To cook all the soba equally, it’s best to prepare and have it ready to go.

Once the water is boiling, add the soba and quickly stir so the noodles don’t stick to each other. Cook the soba noodles according to the package instructions. Keep the water boiling on medium to medium-high heat.

Drain the soba noodles (you can reserve the&nbsp;soba water “Sobayu” for drinking). Rinse the soba noodles well under cold water to remove the starch.

Serve the noodles in individual dishes, and divide the sauce.

Now get ready for the toppings. Gently squeeze the grated daikon and place on top of the noodles (Don’t squeeze too hard and save some moisture so it’s more refreshing, but too much liquid will dilute the sauce). Place katsuobushi, tenkasu, green onion, and shredded nori. Serve immediately.

How to Make Oroshi Soba (Recipe) おろしそばの作り方 (レシピ)

A traditional healthy and delicious Japanese lunch, zaru soba is simple and easy to make!

Zaru Soba (Cold Soba Noodles -ざるそば)

dry soba noodles

daikon

scallions (finely chopped)

wasabi paste

nori

kombu (dried kelp)

sugar

bonito flakes dashi powder

Add kombu to 2 cups of water and set aside for 30 minutes.
Add soy sauce, mirin and sugar and bring to a boil. As soon as the water comes to a boil, remove the kombu and discard it, or slice it into to sticks. You can then pan fry it with a little soy sauce to eat as a side. Add bonito flakes (or dashi powder) and boil for 3 minutes. Turn the heat off and let sit for a couple of minutes, until all the flakes have sunken to the bottom of the pot.

Strain the mentsuyu into a container with a lid, let cool to room temperature, seal and refrigerate. The mentsuyu is best when very cold.

Squeeze out half of the water from the grated daikon. you want to keep some of the water so it stays moist but remove enough so you can shape it into a little mound. Set aside.

Bring a medium pot of water to a boil. Add soba noodles and cook according to the instruction on the package (noodles usually take between 5-8 minutes to cook). Drain and rinse under cold water. Drain well and divide noodles among two plates or shallow bowls.

Pour about 1/2 &#8211; 3/4 cup of mentsuyu into a bowl for dipping the noodles and serve with a side of grated daikon, scallions, wasabi and nori. Add them to the mentsuyu before eating.

Buckwheat Tea (Sobacha)

Gather the ingredients. Please adjust the amount of water (or buckwheat tea) based on your preference.

Boil 3 ⅓ cups (800 ml) of water in a saucepan on the stove and add 2 Tbsp (20 g) of buckwheat tea.

Boil for 30 seconds and turn off the heat. Cover the saucepan with a lid and allow the tea to steep for 3-4 minutes.

Strain the tea over fine mesh sieve and serve hot.

With a saucepan on the stove

Boil 3 ⅓ cups (800 ml) of water in an electric kettle or a saucepan on the stove. Add 2 Tbsp (20 g) of roasted buckwheat grains to a teapot.

Pour boiling water over the buckwheat in the teapot. Allow the tea to steep for 3-4 minutes before straining.

Serve hot.

With a teapot

Boil ¾ cup (180 ml) of water in an electric kettle or a saucepan on the stove. Add 1 tea bag in a teacup or teapot and pour boiling water over the tea bag.

Allow the tea to steep for 2 minutes before removing the tea bag. Serve hot.

With a tea bag

Let the buckwheat tea cool to room temperature before storing in the refrigerator. Serve cold.

To Serve Cold:

Brew 2-3 more times, but add a few minutes to the steeping time.

To Brew Again:

Try this quick, easy, and cold soba noodle recipe. It&#39;s a simple dish that is perfect for any day, but it will especially appeal to you during the hot summer months.

Cold Soba Noodles (Memil Guksu)

buckwheat noodles ((6.3 ounces), (soba noodles))

g seasoned dried seaweed ((0.4 ounces), finely crushed)

onions

sesame seeds

1.5 Tbsp soy sauce (, regular (I used kikkoman soy sauce))

Tbsp tsuyu sauce ( (Japanese soup base)

oil oil

tsp sugar (, raw or light brown)

cucumber (, thin sliced)

radish sprouts

egg (, boiled)

zucchini (, thin sliced & cooked)

perilla leaves (, thin sliced)

chicken breast (, poached & shredded)

tuna (, drained)

Boil the soba noodles in rolling boiling water just until tender following the package instructions. Drain and rinse in cold water to cool down. Transfer the noodles into a mixing bowl.

While the noodles are cooking, combine the sauce ingredients in a small bowl and mix them well. Set aside.

Combine the noodles with the sauce in a mixing bowl.

Transfer the noodles into a bowl. Garnish with the seaweed, green onions, and sesame seeds by sprinkling them around the bowl. Top up with your choice of other optional topping ingredients listed above. Serve.

Toshikoshi Soba is a traditional Japanese noodle dish served on New Years Eve. Made with buckwheat noodles, hot dashi broth and a variety of toppings, this simple soba noodle soup symbolizes cutting off any hardships of the past year and welcoming good luck for the new year. 

Toshikoshi Soba (New Year’s Eve Soba) 年越しそば 

(600 ml) dashi

sake

tsp sugar

tsp msg

soba

scallions, sliced

tempura

inari (fried tofu)

wakame (seaweed), rehydrated

daikon, grated

kamaboko (fish cakes), sliced

ganmodoki (fried tofu cakes), sliced

togarashi

water (660 milliliters)

tbsp (85 ml) mentsuyu

(60 grams) cake flour

tbsp (10 grams) potato starch

ml ice cold sparkling water (or regular water)

vinegar

Add dashi to a pot and bring to a simmer. Add sake, mirin, sugar and msg. Stir to combine. Once simmering, add the soy sauce. Turn off the heat, remove from the stove and set aside.

Cook soba noodles following package directions. Drain and rinse the soba noodles well to remove excess starch. Gently squeeze the soba noodles to remove excess water.

Prepare any toppings you would like to add (see above for options).

Place the pot of soup base back onto the stove over medium high heat. Once simmering, add the soba noodles and let it re-heat for about 20-30 seconds.

Divide the noodles between two bowls and pour the hot soup broth on top. Add your toppings, serve and enjoy!

In a medium pot add kombu and water, and allow it to soak for at least 3 hours.

Turn on heat to medium low and bring to a light simmer, for about 10 minutes.

Skim the surface if needed. Just before boiling, remove the kombu from the pot. Kombu dashi is now ready to be used.

Kombu Dashi:

Add the tsuyu, mirin and water to a medium pot and stir. Heat over medium until just simmering and hot.

Mentsuyu Broth Version

Prepare any vegetables / proteins you are using to make tempura. Root vegetables should be sliced thinly.

Add flour, potato starch and salt to a bowl. Add the mayo (or vinegar) and ice cold water / sparkling water and stir. Do not over mix or it will form gluten, some clumps of flour is okay.

Add oil to a deep fryer or pot, about 2 inches in height. Heat oil to 170 C (340 F). Once heated, dip the vegetables into the batter and carefully add it to the oil to fry. Do not overcrowd or the tempura will drop. Try to keep the temperature as consistent as possible for best results. Fry for about 3-4 minutes. Place onto a wire rack to let excess oil drip off.

This was our first time making this recipe and it was so delicious!

I tripled the recipe as I was making enough to serve myself and my boyfriend who eats a lot and it ended up being a perfect portion.  

When making the broth, I added dried shiitake mushrooms as well as doubling up on dried kombu and dashi powder since I didn’t have MSG on hand.  So even though I went off the path of traditional, I still ended up with a delicious, sweet, umami flavored broth!

This recipe is perfect for those cold winter nights, and I loved it so much I will definitely be making it again!  Thank you so much for sharing!

Woo hoo! I made this recipe with a few adjustments with what we had- tempura sweet potato and zucchini instead of kobocha, soft boiled eggs from a local farm, a little more soy sauce to the broth (we like it salty), and I quick boiled my carrot flowers (cut with a small knife) in dashi water. Light and yummy. Could eat cold or hot!

We’ve officially adopted this as a NYE tradition. Love the layers of meaning and symbolism added to a meal we eat so often. We topped with jammy eggs, corn, bok choy, green onion, and mushrooms. Hubs spiced his up with chili oil, and I added oyster sauce and a splash of ponzu to my bowl before ladling in the broth.

I couldn’t find MSG, but I did find Mushroom &amp; Co Umami seasoning at Trader Joe’s and OOMPH that was a good move.

This is one of my favourite meal now! It’s so perfect, the pumpkin tempura with the tofu and the daikon… Also the soup and soba noodles together will send you straight into noodle heaven! Surprisingly easy and quick to make too! :)

Memil-guksu is a simple and refreshing summer recipe you will love. It&#039;s a cold soba dish served with a delicious dipping sauce. It&#039;s easy to prepare and cools you right down!

Cold soba with dipping sauce (Memil-guksu: 메밀국수)

bundles (about 390 grams) of soba (buckwheat noodles)

wasabi sauce

(about 60 grams) peeled daikon or Korean radish

green onions, chopped

gim (seaweed paper)

tsuyu sauce

Prepare wasabi, daikon, gim, and tsuyu sauce

Combine 2 teaspoons wasabi powder and 2 teaspoons water in a small bowl. Mix well and cover. Set aside. Grate the daikon and transfer to a strainer over a bowl. Set aside. Toast the both sides of the seaweed paper until it's very crunchy. Shred thinly with kitchen scissors, and keep it in a plastic bag to keep it from getting soggy. Set aside Combine the tsuyu sauce and the cold water in a small bowl. Stir it to mix well. Set aside.

Cook the noodles

Bring a pot of water to a boil and add the noodles. Stir them with a wooden spoon to prevent them from sticking to each other. Cover and cook for 6 to 7 minutes over medium high heat. If it boils over, crack the lid a bit or keep it off. About 6 minutes later, take a sample of the noodles and taste it. If it's cooked nicely, remove from the heat. If it's still a little uncooked, cook 1 or 2 minutes longer. Drain the noodles through a strainer. Rinse them under cold running water, rubbing with both hands until the noodles get cold and not slippery anymore. As a final step, fill a large bowl with cold water with some ice cubes, to make the noodles very cold and chewier. Drain and make 6 equal size bundles. Place them on a bamboo mat on a large platter. Sprinkle some chopped green onion over top of each bundle and add some shredded gim, too.

Serve

Divide the sauce into 2 bowls. Add the grated daikon, green onion, a few ice cubes to each bowl. Place the noodle platter along with the wasabi sauce in the center of the table. Prepare an individual plate, chopsticks for each person.

How to eat

Take a bundle of the noodles with chopsticks and transfer to an individual plate. Take some noodles, dip them into the sauce, and eat. When the bundle on your plate is done, take another. If you find the melting ice has diluted the dipping sauce, you can add some more tsuyu sauce if you want. Once your noodles are done, you can drink the sauce! Enjoy the cool noodles!
