sweet potato (cubed)

Extra-virgin olive oil (for drizzling)

watermelon radish radishes

carrots

red cabbage

lemon

kale leaves (chopped)

brown rice or quinoa

chickpeas lentils

sauerkraut

sesame seeds or hemp seeds

Turmeric Tahini Sauce (for serving)

Microgreens (optional)

Sea salt and black pepper

Preheat the oven to 400°F and line a large baking sheet with parchment paper.

Toss the sweet potatoes with olive oil, salt, and pepper, and spread onto the baking sheet. Roast for 20 minutes, or until golden brown.

Thinly slice the radish into rounds (this is best done on a mandoline), and use a vegetable peeler to peel the carrots into ribbons.

Toss the radish slices, carrots, and shredded cabbage with a squeeze of lemon. Set aside.

Place the kale leaves into a large bowl and toss with a squeeze of lemon and a few pinches of salt. Use your hands to massage the leaves until they become soft and wilted and reduce in the bowl by about half.

Assemble individual bowls with the brown rice, chickpeas, kale, carrots, radishes, cabbage, sweet potatoes, sauerkraut, sesame seeds, and microgreens, if using. Season with salt and pepper and serve with the Turmeric Tahini Sauce.

This easy Buddha Bowl is made with roasted broccoli, butternut squash, and onions piled on top of whole grain rice and topped with sliced avocado, a sunny-side fried egg, and crunchy pecans.

Heather’s Buddha Bowl

Preheat oven to 400 degrees F.

On a large sheet pan, toss broccoli, squash and onions with olive oil, salt and pepper, to taste.

Spread veggies out in an even layer and roast for 20-25 minutes, or until crisp tender.

Meanwhile, heat a medium skillet over medium-low heat and lightly spray with oil.

Add eggs, one at a time, leaving space between them. Season each with a pinch of salt and pepper, cover and cook until whites are just set and yolk is still runny.

Divide rice and roasted veggies evenly among 4 bowls.

Top each with 1 ounce avocado and 1 egg and 1 tablespoon pecans.

Serve immediately.

Nourishing Buddha Bowls with Maple Roasted Chickpeas

chickpeas (14 ounces)

cinnamon

maple syrup

cayenne pepper

sweet potato,

quinoa, cooked

purple cabbage, shredded

Preheat the oven to 425 degrees and line 2 baking pans with parchment paper.

Pat your chickpeas with a paper towel until they&#8217;re mostly dry then toss them with the olive oil, salt, cinnamon, maple syrup and cayenne pepper. Place on a baking pan and bake for 30-35 minutes until golden brown and crispy.

Place the sweet potatoes on a separate pan and bake for 20-30 minutes until tender. (You can cook the sweet potatoes and chickpeas at the same time.)

To prepare the dressing, blend everything together until smooth.

To assemble your bowl, place quinoa on the bottom, and top with shredded cabbage, kale, quinoa, sliced avocado, sweet potato, and chickpeas. Top with the tahini dressing
