These Crispy Buffalo Chickpeas are equal parts delicious and addictive! Made with only 4 ingredients, this Oil-Free recipe has a perfect kick and crunch.

Crispy Buffalo Chickpeas (Only 4 Ingredients!)

tsp Nutritional Yeast

tbsp Cornstarch

tbsp Buffalo Hot Sauce (not Wing Sauce)

Drain your can of Chickpeas, but do not rinse them. Add them to a Medium Sized Bowl, then sprinkle the Cornstarch and Nutritional Yeast over the top of them. Mix Well.

Once the Chickpeas are evenly coated in the &#8220;breading&#8221;, add the Buffalo Hot Sauce to the bowl and mix until well-incorporated.

Spread the Chickpeas evenly over a greased or lined Baking Tray. Bake for 30 minutes, stir, then bake for an additional 30 minutes. If the Chickpeas are not crispy at this point, broil them on high for 2-5 minutes.

The Chickpeas may initially retain some moisture, but should crisp up after about 5-10 minutes out of the oven. Serve as desired &#8211; they&#8217;re best when still slightly warm!

Easy roasted buffalo chickpea salad recipe! A vegetarian buffalo sauce lover’s salad with crispy roasted buffalo chickpeas and lots of veggies. 

Roasted buffalo chickpea salad

cayenne hot sauce (such as Frank's)

Tbsp unsalted butter, melted

15 oz can chickpeas, drained, rinsed, and patted dry

romaine lettuce, lettuce

celery stalks, chopped

carrots,

medium bell pepper

avocado, seeded, peeled, and diced

red onion

blue cheese

6-10 Tbsp ranch dressing

salt and pepper

Preheat oven to 450° F. Line a baking sheet with parchment paper for easy clean up (optional).

Roast the chickpeas

Combine the cayenne hot sauce and the butter in a medium mixing bowl. Add the chickpeas and stir to combine. Spread the chickpeas evenly on the baking sheet and roast for 30 minutes, tossing chickpeas once halfway through. Remove from the heat and let cool for a few minutes.

FOR THE CRISPY ROASTED BUFFALO CHICKPEAS

Put the salad together

Toss lettuce, celery, carrots, bell pepper, avocado, onion, and blue cheese together in a large bowl. Divide among 4 plates and top each with 1/4 of the chickpeas. Top with 1-2 Tablespoons of ranch dressing, depending on preference. Top with a pinch of salt and pepper.

FOR THE SALAD

Flavorful spring asparagus pasta recipe! This vegetarian pasta with peas and onion sauce is simple yet rich with flavor.

Asparagus pasta with peas and onion sauce

Tablespoons salted butter

olive oil

sweet yellow onions

Tablespoon sugar

asparagus

English peas

sherry cooking wine

egg pasta noodles (like fettuccine or linguine)

parmesan cheese (plus more for serving)

Salt and pepper

Heat butter and oil in a large cast iron skillet over medium heat. Add onion and sugar and stir to combine. Cook for about 5 minutes, until onions are just starting to brown. Give a good stir and reduce heat to medium low. Continue to cook until onions are brown and caramelized, about an hour, stirring every 10 minutes. Be patient here! You want those onions to be brown and rich with flavor!*

Meanwhile, cook the pasta according to package directions, and prepare your vegetables and grate your cheese.

When onions are caramelized, stir in the asparagus and cook until al dente, about 5 minutes.

Add the peas and the sherry, and cook for another 2 minutes, then toss in the cooked pasta. When well combined, add cheese and toss until cheese is melted and pasta is well coated with onion sauce.
