Burrata pasta is simplicity at its finest! Pair this rich cheese with a hearty tomato basil sauce for an easy dinner that's truly sublime.

Burrata Pasta

red and yellow cherry tomatoes, sliced in half (or, omit if they’re not

Make the tomato basil sauce

Add the olive oil to a saucepan over medium heat. Add the sliced garlic and cook for about 30 to 45 seconds until lightly browned and fragrant. Add the whole tomatoes with the can liquid, taking care as it may spit as the tomatoes hit the hot oil. Use a potato masher to break up the tomatoes into small pieces (see the sauce photo above). Add the kosher salt and chopped basil leaves and bring to a heavy simmer. Cover the saucepan with a lid slightly ajar and simmer, bubbling rapidly, for 10 to 12 minutes until thickened. (If you prefer a smoother texture you can immersion blend it, but we highly recommend the chunky rustic texture here.)

Cook the pasta

Meanwhile, bring a large pot of heavily salted water to a boil. Add the pasta and cook until al dente. Set the timer for a few minutes less than the package instructions and then taste: the pasta should be just done, still with some firmness. Drain the pasta and return to the pot. Add a drizzle of olive oil if the sauce is not yet done, to prevent sticking.

Serve

Toss the noodles with the sauce until well coated. Add to a platter and top with the grated Parmesan. Add the two burrata balls, and arrange the cherry tomatoes around them. Top with a drizzle of olive oil, several pinches kosher salt, fresh ground black pepper and additional chopped basil. When serving, have each eater break off pieces of the burrata for their portion, or simply break it into pieces and lightly toss throughout the pasta.

Cook the pasta to al dente in a large pan of salted water.

Have your Sun Dried Tomato Pesto out of the fridge or prepare it in 5 minutes

Reserve a cup to a cup and half of pasta water once the pasta has cooked

Drain the pasta and start tossing it in the Sun Dried Tomato Pesto . Add more or less to your taste.

Alternate between the pasta water and Parmesan cheese while tossing the pasta to create a luscious and creammy sauce.

Serve the pasta with the torn bits of burrata cheese over the top and allow it to seep in the sauce.

Garnish with fresh basil, chilli flakes, salt and pepper.

Burrata pasta made with sun dried tomato pesto.

This Calabrian chili pasta has a creamy, spicy sauce made with Calabrian chilies and topped with creamy burrata cheese and fresh basil! It&#39;s the perfect easy weeknight meal that comes together in about 30 minutes!

Calabrian Chili Pasta

shallot (finely chopped)

garlic (finely chopped)

Calabrian chilies (more

tomato paste

heavy cream

parmesan cheese (optional)

basil (finely sliced)

short pasta

pasta water (as needed)

burrata cheese

In a large skillet, heat the olive oil over medium heat. Add in the shallots and garlic and cook until soft and aromatic, about 5 minutes.

Stir in the Calabrian chilies and tomato paste until smooth and continue to cook for another 2 minutes.

Slowly whisk in the heavy cream until fully combined, then reduce the heat to low. Stir occasionally and continue to cook until the sauce begins to simmer and thickens enough to coat the back of a spoon.

Then stir in the parmesan and fresh basil.

While the sauce is cooking, go ahead and cook your pasta according to package directions. Make sure you heavily salt the water and cook the pasta for about 1-2 minutes less than the listed time for perfect al dente pasta!

Before draining, scoop out about ¼ cup of the starchy pasta water and set aside. Then drain the pasta (but do NOT rinse it).

Add the al dente pasta and pasta water to the sauce and toss gently to combine for 1-2 minutes or until the sauce thickens up and coats the noodles.

Since the pasta water is salty, I like to wait to salt the sauce until after I&#39;ve added in the pasta water and noodles. Once the noodles are coated in the sauce, taste and adjust seasonings as needed.

Serve immediately and top with creamy Burrata and an extra drizzle of Calabrian chilies if desired!

One of those recipes that you can throw together in a pinch on a weeknight. Trust me – you’ll be putting this on regular rotation for the rest of the season!

Spring Pea Pasta with Burrata

spring peas

tube-shaped pasta

garlic (chopped)

shallot (sliced)

red pepper flakes

unsalted butter

mint

lemon

salt and freshly cracked black pepper

pea tendrils to garnish

Bring a large pot of water to boil, add the peas and boil gently until almost tender, about 2 minutes. Using a slotted spoon, or spider, remove the peas from the boiling water and rinse under cold water in order to cool completely.

To the same boiling water, add the pasta and cook according to package directions. While the pasta is cooking, make the pea sauce.

Place a skillet over medium heat, add the olive oil, garlic, shallot and red pepper flakes and cook for 2-3 minutes until fragrant. Add the butter and cook for about 1 minute more. Add the peas and stir to combine and season with salt and pepper. Remove from the heat and add the mint. Taste and season adjust salt and freshly ground black pepper as needed.

When the pasta is cooked, drain and add to the skillet with the peas. Stir together. Add the parmesan cheese, lemon juice and zest tossing gently to incorporate cheese. Break the burrata up into small pieces and dot the top of the skillet with it and garnish with extra mint leaves and pea tendrils. Serve immediately.
