These were awesome! A few things I did, I added brown rice and for my son who is off beef and doesn’t love butternut squash I did a sweet potato (omitting the ground beef on his, but with the brown rice you don’t miss it. I may prefer it with sweet potato), either way you do it they were great

Shredded beef combined with scrambled eggs, tomatoes, and onions make a delicious skillet breakfast or breakfast burritos.

Machaca con Huevo (Machaca with Eggs)

roma tomatoes (chopped)

jalapeño (diced (optional))

brisket

eggs

flour tortillas

In a large skillet, sauté onion in olive oil for 2 minutes. Once onions are translucent add tomato, jalapeño (if using), brisket or carne seca and cook for another 2 to 3 minutes.

Meanwhile, in a medium bowl whisk eggs and then add them to skillet and cook for 2 to 3 minutes or until eggs are cooked thoroughly.

Serve with salsa of your choice and flour tortillas.

Looks delicious! I'm not a black bean fan I would actually use pink or pinto beans. And as for those worried about carbs etc I read all posts prior to mine. Please remember you are not eating a full cup of "any one thing" here so when you are looking up 1-cup black beans at 240 carbs now try to figure out how many of those little pieces you will have inside your helping? After you make this delicious looking low carb, low calorie dish and take only one cupful out of the pan do you have 1 full cup of nothing but those black beans in that scoop? 🤔🤣
No. You have some of the cheese, some sauce, some zoodles, some corn. . . You get the picture. The next scoop might be more zoodles and less corn. If you are seriously counting all your carbs/calories maybe you need to cook everything separately and take a tablespoon of what you want and put in a bowl, mix and then eat.  Come on, eating is not supposed to be rocket science or boring. 
Make it!   Eat it!  Enjoy it!
