Majorly comforting and warming, but somehow fresh and zippy thanks to the fennel seeds and lemon.

Creamy Beans, Fennel + Greens

tbsp olive oil,

fennel (or

fennel seeds

thyme leaves

garlic,

greens spinach

lemon

Queen Butter Beans, stock

Heat the olive oil in a large pan over a medium heat and sweat the fennel until softened, roughly 7-8 minutes, stirring occasionally.

Stir in the fennel seeds, thyme and garlic and cook out for 2-3 mins.

Tip in the beans with all of their liquid, plus half a jar of water. Allow to bubble away, stirring until the broth becomes thick.

Reduce the heat slightly and stir in the lemon juice and greens. Cook until the greens have wilted down and the liquid is thick and starchy. Season to taste.

Serve in bowls with an extra drizzle of olive oil and the lemon zest.

This can be served as a speedy weeknight dinner with a fresh side salad, or topped with some roasted toms for a burst of sweetness and colour. Butter Beans with Ricotta, Lemon + Basil Pesto

basil (roughly 15 grams)

garlic clove, crushed

olive oil,

ricotta cheese,

lemon, juice and zest

Add the toasted pine nuts, fresh basil, wild garlic (or garlic clove, if using), grated parmesan and the olive oil to a blender or food processor and blitz until you reach an oozy, pesto-like consistency; you may need to add more oil to bind the mixture together.

For the beans, they can be served hot or cold. If you’re heating them through, drain out about half of the liquid from the jar and pour the rest, along with the beans, into a frying pan. Gently warm through over a low heat. If you’re looking for something fresher for the Spring/Summer months, the beans are already cooked, so simply serve the, beans as they are! 

Spoon the beans onto a large serving platter and dollop over the ricotta cheese. Drizzle over the pesto and grate over the zest of one lemon and a squeeze of its juice. Finish with some cracked black pepper and an extra drizzle of olive oil, if you fancy.

Queen Butter Beans stock

parmesan rind (optional)

butter

parmesan, grated (or veggie alternative)

Extra virgin olive oil,

greens, kale broccoli

side salad

Toast the black pepper in a heavy bottomed pan until it becomes fragrant, roughly 2-3 minutes. Immediately add the beans with their bean stock and bring the mixture to a boil.

Let the mixture reduce to a thickness resembling a heavy cream coating the beans. If the beans begin to stick to the bottom, loosen with a tbsp of water. Fold through the butter and take the pan off the heat.

Stir through the parmesan and plate up with some freshly milled black pepper and a drizzle of extra virgin olive oil. Serve with some charred lemon, steamed greens or a fresh side salad.
