These biscuits are addictive. This recipe can easily be doubled or tripled.

Honey Buttermilk Biscuits

all-purpose flour

butter

white granulated sugar

salt

baking powder

baking soda

honey

buttermilk

ginger

Whisk together the flour, sugar, salt, baking powder and baking soda in a large bowl.  Cut in the butter with a spoon until flour mixture resembles coarse crumbs. Add honey and buttermilk and stir together all ingredients.

Turn out on a floured surface and knead five or six times.  Pat dough out with your hand or roll out to about 1/2 inch thick.  Cut out biscuits with a biscuit cutter and place on a sprayed baking sheet about an inch apart.  I used a square cutter but a round one or even a cup or glass is fine.

Bake in a preheated 425 degree oven for 10 to 12 minutes until tops are browned.  Remove from oven and brush on topping.

Melt butter in microwave and add honey and ginger.  Mix together and brush over biscuits.  Return biscuits to oven for 2 minutes.

Buttermilk Biscuits

Tablespoons frozen butter

buttermilk*

Tablespoons honey

Preheat oven to 400°

Combine flour, baking powder, and salt in a large bowl. Grate the frozen butter into the flour mixture and then use a pastry blender or fork to incorporate it until mixture resembles coarse meal. Chill in refrigerator for 10 minutes.

Stir honey into buttermilk until well blended.&nbsp;

Add buttermilk mixture to flour mixture and stir just until moist. Turn dough out onto a lightly floured surface and form gently into a ball.  Roll or pat the dough into a rectangle 1/2 inch thick.

Fold the dough into thirds (as if folding a piece of paper to fit into an envelope).  Gently re-roll dough into a rectangle, 1/2 inch thick. Fold dough into thirds one more time. Gently roll to a 3/4-inch thickness.

Cut dough with a biscuit or cookie cutter to form 10-12 biscuits. Place them 1 inch apart on a baking sheet lined with parchment paper.&nbsp;

Bake at 400° for 10-12 minutes or until golden and cooked through. Remove from pan and cool on wire racks.
