This traditional Irish Cabbage and Bacon Recipe is made with only 5 ingredients! Make this tantalizing side dish for Saint Patrick's Day or for any dinner!&nbsp;

Irish Bacon and Cabbage Recipe

green cabbage

onion

chicken broth

mustard seeds

Salt (and pepper)

Place a large stockpot over medium heat. Cut the bacon strips into 4 pieces each. Separate the bacon pieces and place in the pot. Stir and sizzle until the bacon is cooked, but not fully crispy.

Meanwhile, peel the onion and cut it into 8 wedges. Then cut the cabbage in half and remove the core. Cut the cabbage into 12 wedges. Once the bacon is mostly cooked, add the onion to the pot and sauté for 3-4 minutes to soften.

Add the cabbage, chicken broth, and mustard seeds. Stir to move the cabbage to the bottom of the pot and bring the bacon upward. Cover and simmer for 15-20 minutes, until the thickest parts of the cabbage are tender. Stir once or twice while cooking. Taste, then salt and pepper as needed. Serve with whole grain mustard on the side, if desired.

This is one of my favorite savoy cabbage recipes! A simple way of sauteing cabbage with bacon, this will make a perfect side dish or uncomplicated cabbage main dish.

Sauteed Savoy Cabbage with Bacon

onion (about 100 g/ 3.5 oz)

100 g/ 3.5 oz streaky bacon

cabbage

garlic

olive oil

ml/ 4.2 fl.oz/ ½ cup vegetable stock (from ½ a cube is fine)

crème fraiche

fine sea salt and pepper

nutmeg

Chop the onion finely. Set aside.

Cube the bacon, if not already cubed.

Quarter the cabbage, remove the core, place a quarter on its flat side and shred the savoy cabbage into ribbons.

Heat the olive oil in a large skillet or Dutch oven on medium heat. Saute the onion until translucent, add the bacon and fry for a couple of minutes.

In the meantime, finely chop the garlic. Add it to the skillet. Saute for about 5 minutes, stirring often.

Pour the vegetable stock into the pot. Stir again, cover, and cook on low heat for about 20 minutes until the liquid has evaporated and the savoy cabbage is cooked, but not mushy.

Remove from the heat and stir in the crème fraiche.

Adjust the taste with salt, pepper, and freshly grated nutmeg.

Easy to make, healthy recipe for fried cabbage with bacon, the perfect cabbage side dish or a delightful light meal on its own.

Fried Cabbage with Bacon

g/ 3.5 oz lean bacon (See note 1)

vegetable oil (See note 1 as well)

onions

kg/ 2.2 lbs white or green cabbage

sweet paprika powder

sugar

caraway seeds (See note 2)

tomato

vegetable broth

balsamic vinegar +

fine sea salt and black pepper

parsley

Chop the cabbage and set it aside. Cut the bacon into cubes and slice the onions. Finely chop the garlic cloves. Keep the garlic separated from the bacon and onions.

Heat the oil (only if using lean bacon) in a large skillet. Saute the bacon and the onions until the fat has rendered and the onion slices are golden. Pour out most of the rendered bacon fat, keeping only about 1-2 tablespoons of the fat.

Add the chopped garlic cloves to the pan and stir for 1-2 minutes. Add the chopped cabbage. It will seem like a lot, but the cabbage will wilt down after a few minutes of cooking time. Cover and cook for about 6-7, stirring well a few times in between.

Add the sweet paprika powder, sugar, caraway, some salt, and pepper. Stir well and add the finely chopped tomato and the vegetable broth. Cover the pan and saute for another 6-7 minutes or until the cabbage is almost done. You might want to cook the cabbage for a shorter or longer period of time, depending on your taste, the cabbage can remain crunchy or get even softer. But it should not become mushy.

Add 1 tablespoon balsamic vinegar. Stir well and cook the cabbage for another 4-5 minutes without the lid. Adjust the taste generously with more sea salt and pepper, balsamic vinegar, and a little sugar. The cabbage should taste slightly sweet and sour.

Stir in the chopped parsley.
