Cabbage Carrot Salad with Cilantro Lime Mayonnaise

Tbsp mustard

Tbsp lime juice

tsp Sea salt (+ extra if needed)

tsp Pepper (+ extra if needed)

Slice Cabbage

Cut cabbage into very thin stripes. Use a mandoline or your food processor with the slicing attachment or a sharp knife.

Grate Carrot

Prep Cilantro

Make Mayonnaise

Add egg, mustard, lime juice, salt, and pepper to a tall jar that fits your immersion blender, then start blending and slowly add oil in a continuous thin string until the mayonnaise thickens. Once it thickened, remove 3-4 Tbsp and add to another jar, add 1 cup cilantro leaves and use the same blender to blend. Once smooth, add as much mayonnaise as you like to the cilantro mayo. (Watch video for further demonstration)

Add Mayo to Salad

Add remaining cilantro leaves and cilantro lime mayonnaise to carrots and cabbage and mix with your hands until well combined. Try at this point to determine if it needs more seasoning. It most likely will need more salt and pepper.

Carrot Cabbage Salad | with cilantro lime mayonnaise

This simple cabbage and carrot salad features shredded green cabbage, julienned carrots, and fresh dill. Tossed in a tangy and slightly sweet creamy mustard dressing, it&#039;s a refreshing and nutritious side dish perfect for any meal. The salad can be used as a side dish for grilled meats, a topping for tacos or sandwiches, or enjoyed on its own for a light and healthy meal.

Simple Easy Cabbage and Carrot Salad Recipe

julienned carrots (packed (about 3 carrots))

dill

onion

tbsp black sesame seeds (or use regular)

tbsp mustard

tbsp honey (pr maple syrup)

sour cream

tbsp apple cider vinegar

tsp sea salt

garlic granules (or powder)

Cut cabbage into thin slices with a knife or use a mandoline slicer for uniform long thin slices.

Peel the carrots then julienne: in one of two ways: with a knife or with a julienne peeler.

Slice the onion and chop the fresh dill.

Prepare ingredients

In a large bowl, combine the shredded cabbage, julienned carrots, chopped dill, sliced onion, and sesame seeds ( I used them for aesthetic appeal plus dds a nutty flavor and a bit of crunch).

To make the dressing, just whisk together all ingredients in a separate small bowl and mix until homogeneous.

Then add the dressing to the chopped salad ingredients and mix to coat. You can use 2/3 of the dressing or all, adjust to your liking.

Serve immediately or refrigerate for up to 2 hours to allow the flavors to meld.
