How to make date seed coffee with leftover date pits; a wonderful, all-natural caffeine-free coffee alternative that comes with several health benefits (and a great way to reduce waste!)

Date Seed Coffee (Caffeine-Free Coffee Alternative)

seeds (8-10 are needed per cup of coffee)

tsp date seed powder

floz water

cardamom

cinnamon

tsp date syrup (or another sweetener)

Tbsp oat milk (or other milk, optional)

Gather all of your date seeds (I fully recommend making a big batch of date syrup or date paste, and that will leave you with plenty of seeds!). If they are very sticky, you may want to first soak them for 45-60 minutes and then clean them.

Make sure they are dry before roasting them - I like to allow them to air-dry for a few days first. Alternatively, you could use a dehydrator if you have one.

Roast the dried seeds in the oven at 350ºF/175ºC - 30-45 minutes on a parchment-lined tray. Then allow them to cool.The roasting step is critical, as it is with coffee beans, too, to develop flavor.

Step 1: Clean, dry, and roast the date seeds

Once cooled, transfer the dates to an electric coffee/spice grinder (you may need to do this in batches) and grind into a powder.

Sieve the powder and re-grind any larger pieces. Then the date seed powder is ready to use immediately or store for later.

Step 2: Grind the seeds into a powder

Heat the water to 195ºF/90ºC (just before it begins to boil).

Combine the date seed powder and spices and mix well. Transfer this mixture to a coffee filter over a jug (read the FAQs for more methods to prepare the ground date pit powder into coffee).

Pour the water over the powder and allow it to drip until you have enough for your date seed coffee.

You can then drink the date seed drink as-is or enjoy it with a little of your favorite sweetener (I used date syrup) and a dash of milk (I used oat milk).

Step 3: Make the date seed coffee

Make ahead: Okay, technically, this isn’t ‘making it ahead.’ However, a top tip I’ve found is to collect all of my date seeds over time. I like to wash them, allow them to naturally dry for several days, and then keep them in an airtight container in the freezer until I’m ready to make a batch of date seed powder for coffee.Store: Store the powder in an airtight container in a cool, dark location (like a pantry or kitchen cupboard) for several months. The sooner you enjoy it, the better the flavor will be. However, you can enjoy date seed coffee for months and months to come, and the taste doesn’t drop off too much over time.Freeze:  You may be able to store the ground powder in the freezer, too. Though, this isn’t something I’ve tried.

First, you need to dry your vanilla beans. You can do this two different ways. One way is to allow your vanilla beans to dry out over a few weeks by exposing them to air.

The quicker way is to dry them out is in the oven on very low heat. First, preheat your oven to 100° - 200° F. (preferably 100°, but some ovens, like mine, only go down to 200°).

Next, line your baking sheet with parchment paper and place your fresh vanilla beans on top.

Once the oven is preheated, place in the oven. Your cooking time really depends on how fresh your vanilla beans are and how low the temperature of your oven is.

If your vanilla beans are very moist and your oven is set 100°F, you will want to bake your vanilla for 1.5 - 2 hours. Alternatively, if your oven is set to 200°, you&#039;ll want to cook your vanilla for 1 - 1.5 hours.

If your vanilla beans are already starting to dry out, you may want to check them after 30 - 45 minutes.

You don&#39;t want to overcook them, but rather get them nice and dry. If your vanilla beans are still moist after baking, place them back in the oven for a little longer. I find it&#39;s always best to err on the side of caution and keep checking, rather than leaving them in too long and overcooking them.

Once you think they&#039;re dry enough, bend a tip, and it should snap right off. The seeds inside will still be a little shiny, but they shouldn&#039;t be too moist.

Once your vanilla is dried and cooled, place into your blender or food processor (a small smoothie blender works great for small batches like this), and blend for about a minute or until it becomes a fine powder.

To make your French Vanilla Cappuccino Mix, throw all your ingredients into a blender (again, a small smoothie blender works great), and blend until smooth. Alternatively, you can just mix the ingredients together with a spoon. However, I find that the cacao powder and coconut milk powder tend to get clumpy when it&#039;s not blended. It also helps to blend in the vanilla a little better with the other ingredients.

Once all the ingredients are mixed or blended, store in an airtight container (preferably glass) for up to six months.

To use your Homemade French Vanilla Cappuccino Mix, add two tablespoons to a 350ml (11oz) mug. To get it nice and smooth, I like to mix milk or hot water to make a paste. Next, stir in either hot water or warmed milk (I love using tigernut or oat milk) and mix well.

A great caffeine-free alternative to the traditional hot drink

Preheat the oven to 400F and line a baking sheet with parchment.

Remove the seeds from your dates. I used the seeds from Medjool dates. Clean thoroughly.

Roast on a parchment-lined baking sheet for around 40 minutes.

After removing from the oven, use a coffee grinder or food processor to create date coffee grinds.

Prepare how you would regular coffee.

tbsp raw cacao ((approx 20 grams))

maple syrup

himalayan rock salt

spices

Add milk, water and chopped raw cacao to a pot and simmer gently until cacao is melted (don&#39;t boil and make sure to whisk regularly)

Add maple syrup, pinch of salt and any spices you want to include

Use a hand blender to froth before pouring into your favourite mug
