Cajun Chicken Burger

500 g Chicken breasts, (halved)

tbsp Ground cumin

tbsp Smoked paprika

tbsp Ground coriander

cayenne

Sea salt and black pepper

Large carrot, (shredded)

0.25 Small red cabbage, (shredded)

Head of little gem lettuce, (shredded)

Greek yoghurt

Garlic clove, (crushed)

Lime

Ciabatta rolls to serve.

Pound the chicken breasts so they are an even thickness.

Mix the spices and salt and pepper together and roll the chicken in it so each piece is evenly coated.

With a paper towel, oil the grill of the BBQ and place the chicken on it. Cook for 4 minutes each side, making sure the chicken gets to 75 Celsius (165 Fahrenheit)

Meanwhile, put all of the coleslaw ingredients in to a bowl and mix well.

Put the burgers into the ciabatta rolls and top with the coleslaw.

It's smoky, zesty and has a little bit of a kick to it. Pair is with some creamy slaw for a burger that will go down a storm at any BBQ.

Cajun Chicken Recipe that can be baked, pan fried or grilled. Lean chicken breast coated in easy homemade cajun seasoning for a healthy dinner with a lot of flavour.

Cajun Chicken {Baked, Grilled or Fried}

lbs chicken breasts (3 large, boneless & skinless)

tbsp avocado or olive oil

tsp paprika

garlic powder

oregano

thyme

onion powder

cayenne pepper

tsp black pepper

tsp salt

tsp red pepper flakes

Cut chicken breasts lengthwise into thinner cutlets and place in a large bowl. In a small bowl, add paprika, garlic powder, oregano, thyme, onion powder, cayenne pepper, black pepper, salt and red pepper flakes; stir to combine.

Sprinkle 1 1/2 tbsp of prepared cajun seasoning in the step above on chicken breasts and using tongs toss to coat. If you are grilling or baking cajun chicken, also add avocado oil to the mix.

Pan Fried Cajun Chicken: Preheat large ceramic non-stick skillet on medium heat and swirl oil to coat. Add chicken and cook for 5 minutes or until white edges appear, turn and cook for another 4-5 minutes. Transfer onto a plate, cover with foil and let rest for 5 minutes.

Baked Cajun Chicken: Preheat oven to 450 degrees F, arrange chicken in a single layer in a large baking dish and bake for 25 minutes. Remove from the oven, cover and let rest for 10 minutes.

Grilled Cajun Chicken: Preheat grill on medium-high heat (450-500 degrees F), place chicken on the grill, close the lid and grill for 8-10 minutes turning once. Do not overcook. Remove from the grill, cover with foil and let rest for 5 minutes.

Easy Cajun Chicken and Rice

In a small bowl, combine ingredients for cajun seasoning - smoked paprika, garlic powder, onion powder, chili powder, thyme, oregano, and cayenne pepper. Mix together.

Season chicken with half of the cajun seasoning (the rest will be used later in the recipe) and salt and pepper as desired. Add sliced bacon to a skillet over medium low heat. Allow bacon to cook and render out the fat, about 10 minutes, stir occasionally. Add 1 tbsp butter and a drizzle of olive and and increase the heat to medium. Add chicken and sear on both sides, about 3 minutes per side.

Remove chicken from the skillet onto a plate. Add onions, peppers, and celery to the skillet. Season with salt and pepper and a teaspoon of the cajun seasoning. Cook for 3-5 minutes, until everything begins to soften and become fragrant.

Add rice and stir into the vegetables. Add chicken stock, squeeze one lemon, and add chicken back into the skillet.  Bring to a boil and then cover with a lid and simmer for 15-20 minutes.

In a separate skillet or saucepan, add heavy cream, diced garlic, tomato paste, and remaining cajun seasoning. Heat over low heat until mixture begins to thicken. Then squeeze lemon juice into the sauce and remove from the heat. Whisk ingredients together to ensure lemon juice is fully incorporated. Season with a pinch of salt.

Once rice is finished, pour sauce into the skillet with the chicken and rice. Mix together. Slice chicken and toss together.
