Homemade salsa recipe using fresh tomatoes! I make this salsa recipe for canning every summer and it is simply the best.

Homemade Salsa Recipe for Canning

tomatoes

Remove the peels from the tomatoes using one of the methods mentioned above. Cut them up and set in a colander over the sink to drain. In a food processor, chop the onions, peppers and cilantro. Pour into a large stock pot. Add the vinegar, salt and pepper.

Chop the tomatoes in the food processor and add to the stock pot. Bring to a boil over high heat, stirring often so it doesn&#8217;t scorch on the bottom of the pot. Reduce to medium- high and continue to boil for 15 &#8211; 20 more minutes.

While the salsa cooks, sterilize your jars, lids, and bands in boiling water. Add the hot salsa to the sterilized jars, leaving a 1 inch gap at the top of the jar. Clean off the edge of the jar before closing with the lid and band.

Use a pressure canner to can your salsa at 5 pounds pressure for 10 minutes. Allow the canner to cool down completely before moving or opening. Once cool, carefully remove the jars and place on a cooling rack.  Once the jars have completely cooled, test that each lid is sealed by tapping on the top. If you hear a hallow sound, you need to process that jar again. Your salsa is now shelf stable for 18 &#8211; 24 months.

I wanted tο thank you for this very good recipe! I absolutely loved eveгy bit of it. 

I made this today-used Serrano peppers, mostly fresh tomatoes of different varieties, but I had to add a large can of drained peeled tomatoes because it was very salty. I underestimated how many fresh tomatoes you need. Also added garlic and used flat leaf Italian parsley in place of cilantro. It tastes really good, but I think I would decrease the salt a tad or just buy more fresh tomatoes to follow the amount in the recipe.

How to Can Salsa - Home Recipe for Canning Salsa

A super flavorful tomato based salsa with roasted vegetables and chipotle peppers in adobo. SO good for everything from taco dinners to appetizers to breakfast burritos. Eat now, water-bath can or freeze for later.

Roasted Chipotle Salsa (Can or Freeze)

onions, (cut in half and then quartered)

poblano

jalapeno

garlic cloves, (peeled)

olive oil

roma/paste tomatoes, (cored and cut in half)

chipotle peppers

vinegar vinegar

lime juice ((or lemon juice))

oregano

black pepper

cumin

Heat oven to 450 degrees.

Mix all the peppers, onions and garlic on a large baking sheet, tossing with the olive oil. Arrange the peppers cut side down.

Add the tomatoes to a second large baking sheet, placing them cut side down in one layer.

Roast the pans 25 to 30 minutes, turning half way if needed for even cooking and tossing the onions and garlic as needed for even browning.

Remove the pans and immediately cover the pan with the pepper mixture with foil for 10 minutes to steam the skins.

Meanwhile, remove the tomato skins and roughly chop or add to a food processor, pulsing a few times to chop evenly. Add tomatoes and all their juices to a 6-quart or larger stock pot.

Lift foil from pepper mixture and use a sharp knife to remove the charred skins of the peppers. Add all the vegetables and the chipotle peppers to the food processor, pulsing to chop evenly. Scrape the vegetables into the stockpot.

Add all the remaining ingredients (vinegar, lime juice and spices) to the pot and bring to a boil over high heat. Reduce heat to low and simmer, uncovered, for 20 minutes, stirring often.

Serve immediately and store in fridge for a week or freeze or can for longer storage.

TO FREEZE: Let mixture cool then add to freezer-safe containers leaving a 1-inch headspace for expansion. Label and freeze for up to a year.

TO WATER-BATH CAN: Prepare 6 pint canning jars (wash and keep warm), fill canner (or large stock pot with a rack) with water and start heating. Gather lids, rings, damp rag/towel, and jar lifter.

Ladle salsa into one hot jar at a time leaving 1/2-inch headspace. Wipe rims, attach lids and place onto rack in canner. Repeat for all jars.

Bring water in canner to a full boil and start timer for 20 minutes. Lower heat to keep jars at a lower boil, monitoring through the canning time to keep at a steady boil.

When timer goes off, turn off heat, remove lid and set timer for 5 minutes more. Remove jars using jar lifter to a towel-lined surface.

Let cool 12 or more hours before removing rings, testing lids for seal, labeling and storing in a cool, dark place for up to 18 months.

Heat gas grill on high.  If using charcoal, do not use lighter fluid or the tomatoes and peppers will pick up that taste!

Rinse tomatoes and peppers.  Core tomatoes and score a small "X" in the blossom end.  Place tomatoes and peppers on hot grill and close lid.  Turn frequently until peppers are charred and blistered and pretty much black all over.  Tomatoes should have some blackened spots and blistered enough to remove the skins.  Remove from grill.  Place peppers in a bowl and cover with plastic wrap to steam for several minutes.  Let tomatoes cool a bit on a cutting board until you can handle.

Peel and chop the tomatoes and place in a large bowl, being sure to include all the juices.  You should have 7 to 8 cups of chopped tomatoes and juices from 5 pounds of tomatoes.  You need at least 7 cups for safe canning purposes.

Wearing gloves, peel poblano peppers, the blackened skins should come right off.  Pull out stem and discard.  Cut poblanos open and remove seeds.  Finely chop peeled and seeded poblanos.  You should have 1 cup, and no more than 1½ cups, again, for canning purposes.

Place fire roasted tomatoes and poblanos in a large pot and add the remaining ingredients, adding just 1 tablespoon of sugar to start.  Bring to a boil and then turn down and simmer for 10 minutes.

Using an immersion blender or food processor, carefully purée the salsa to a smoother consistency.  In a food processor and working in batches, pulse 8 - 10 times and when all finished, return to the pot.  Taste for seasonings and if too vinegary, add another tablespoon or so of sugar.  If too sweet, add a little more vinegar to balance.  Bring blended salsa back to a boil and simmer a few more minutes.

Have sterilized pint jars and lids and screw caps ready (they should all be washed in very hot water).  Use a canning funnel and ladle hot salsa into jars, leaving a ½-inch head space.  Wipe rims clean with a damp cloth and carefully place lid on and screw cap in place. &nbsp;Process in a boiling water bath for 15 minutes, then place upright on counter for 24 hours (see recipe notes for link to USDA Canning Guidelines). You will hear popping sounds as the jars seal.  If after 24 hours, any haven't sealed, put in refrigerator to use now.

Store jars of salsa in pantry and use within a year.  Enjoy!
